HOMEMADE GRANOLA BARS (HEALTH OR ENERGY BARS)

No fructose corn syrup. Can make an infinite combination of desired flavors...and better than store-bought, but be aware that these will be a tad softer. The last ingredient should read "white or chocolate chips".

Homemade Granola Bars (Health or Energy Bars) image

Steps:

  • Preheat the oven to 325. Line a rimmed baking sheet with parchment paper or foil. Combine the oats, wheat germ, flax seeds, sesame seeds and almonds; spread out evenly on the rimmed baking sheet and toast for approximately 10 to 15 minutes until golden, stirring occasionally and watching carefully so as not to burn.
  • In the meantime, in a large bowl combine salt, coconut, cinnamon and dried cranberries; set aside.
  • In a large measuring cup place the vanilla, honey, butter and brown sugar. Microwave approximately 2 minutes. Mixture will foam and bubble. Stir to completely dissolve brown sugar.
  • When oat mixture is done toasting, transfer to the same bowl with coconut mixture and stir to evenly combine. Add the honey mixture and stir to incorporate.
  • Line a 9" x 13" baking pan with waxed paper. Spread the mixture, using the back of a wooden spoon, pressing to create a smooth, even surface. Place another piece of waxed paper over the top, pressing down to evenly compact the mixture. Compacting is important so the bars won't fall apart when cut. (Suggestion: place one pan of same size within the other and press to even out mixture.).
  • Refrigerate and completely cool the mixture about 2 hours to assure a clean cut. Firmly press down with a large knife to cut into bars. Do not saw. Wrap bars in waxed paper and store in refrigerator or freezer.

1/4 cup flax seed
1/4 cup sesame seeds
1 cup almonds, sliced (or other chopped nuts like cashews, walnuts, peanuts, macadamias or pecans)
1/2 cup shredded coconut
1 teaspoon sea salt or 1 teaspoon kosher salt
1 teaspoon cinnamon
2 teaspoons vanilla
1/2 cup honey
4 tablespoons butter
1/4 cup brown sugar
1 cup dried cranberries (or other chopped dried fruit like raisins, pineapple, apricots, cherries, papaya, prunes, white or c)

GRANOLA BARS WITH DRIED FRUIT AND SEEDS

A combination of nut butter, dried fruit, and lots of seeds makes these chewy homemade granola bars downright irresistible. For a crispier bar, toast them in the oven after baking.

Granola Bars with Dried Fruit and Seeds image

Steps:

  • Preheat oven to 325°F. Lightly coat a 13x9" pan with nonstick spray and line with parchment paper, leaving an overhang on both long sides; spray parchment.
  • Pulse 3/4 cup fruit and 1/2 cup hot water in a food processor until smooth and incorporated, 3-4 minutes. Add honey, almond butter, cinnamon, salt, and vanilla and pulse until combined, about 15 seconds. Add 1/2 cup oats and pulse until well combined, 30-45 seconds. Add pumpkin seeds, sesame seeds, sunflower seeds, coconut, and remaining 1 cup oats and 1/2 cup fruit. Pulse until just combined, about 15 seconds.
  • Transfer mixture to prepared pan, pressing down until completely even. Bake granola until darkened, firm around the edges, and the center gives just slightly when pressed, about 35 minutes. Transfer pan to a wire rack and let cool in pan. Remove granola using parchment overhang, then cut into 20 bars with a serrated knife.
  • Do Ahead
  • Granola can be made 5 days ahead. Keep tightly wrapped at room temperature.

1 1/4 cups dried fruit (cherries, raisins, currants, cranberries, and/or blueberries), divided
2/3 cup honey
1/2 cup creamy almond, peanut, or sunflower butter
1 1/2 teaspoons ground cinnamon
3/4 teaspoon kosher salt

1 1/2 cups old-fashioned oats, divided
1/2 cup raw pumpkin seeds
1/2 cup raw sesame seeds
1/2 cup raw sunflower seeds
1/2 cup unsweetened coconut flakes

A Healthy snack to make, and enjoy. Haven't had a chance to make this yet myself. Use your favorite dried fruit, figs, dates dried cranberries, cherries or blueberries in place of the apricots and raisins. Enjoy.

  • Preheat oven to 350 degrees F.
  • Spray a 9-inch square baking pan with non-stick cooking spray or brush with oil.
  • Combine oats,wheat germ, apricots, raisins, sunflower seeds, cinnamon and salt in a large bowl.
  • Combine melted butter and brown sugar in a small bowl until sugar is dissolved.
  • Stir in honey, egg and vanilla until smooth.
  • Stir liquid mixture into dry mixture until dry ingredients are evenly moistened.
  • Press mixture firmly and evenly in prepared pan.
  • Bake for 20 minutes, or until golden and firm.
  • Cool on wire rack before cutting into squares or bars.
  • Wrap individually for easy grab and go breakfasts and snacks.

Steps:

  • In a large bowl, combine oats, sugar, oat flour, salt and cinnamon; mix well. Stir in apricots, cherries, coconut, pecans and sunflower kernels; set aside., In another bowl, whisk together honey, butter, corn syrup, vanilla and water. Add the honey mixture to the fruit mixture; mix until crumbly. Pat into a lightly greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until golden brown on the edges. Steps:

  • Heat oven to 160C/fan 140C/gas 3. Butter and line the base of a 18 x 25cm tin. Mix the oats, seeds and nuts in a roasting tin, then put in the oven for 5-10 mins to toast.
  • Meanwhile, warm the butter, honey and sugar in a pan, stirring until butter is melted. Add the oat mix, cinnamon and dried fruit, then mix until all the oats are well coated. Tip into the tin, press down lightly, then bake for 30 mins. Cool in tin, then cut into 12 bars.
