Steps:

  • n a large stock pot place beef, potatoes, tomatoes, onion, celery, broth and vegetables. Add enough water to cover ingredients, cover pot and cook over medium heat for 1 hour or until vegetables are soft and beef is cooked through. Season to taste with salt and pepper, rosemary, thyme and basil. Add bacon bits, stir and serve.

1 pound lean ground beef
6 potatoes, diced
1 (14.5 ounce) can diced tomatoes
1 onion, chopped
1 cup chopped celery
1 (10.5 ounce) can beef broth
2 cups mixed vegetables
salt and pepper to taste
1/8 tablespoon dried rosemary
1/8 tablespoon dried thyme
1/4 tablespoon dried basil
1/2 pound bacon - cooked and crumbled

GARBAGE SOUP

This is a budget stretcher recipe where you use your potato peels. It can be the start of any type of soup you want to make, especially if you use method A. where you save it as a clear broth. Use in any recipe that calls for broth or consomme. If it cooks down add some more water (not too much) simmer on low heat covered

Steps:

  • Mix all the ingredients in a large pot and simmer covered for 1 1/2 hours.
  • You may now do one of two things: A- drain off the broth and reserve for future soup-making or use as any consomme, You may freeze it as well, adjust seasoning.
  • B-Puree the veggies add back to the liquid and add any other ingredient you wish- leftover veggies, chicken, meat etc.
  • This is truly a clean-the-fridge soup.

6 -7 large well scrubbed potato peels, cut peels about 1/4 inch thick
1 large onion, chopped
2 carrots, scrubbed or peeled, sliced
1 stalk celery, sliced
1 garlic clove, peeled
1 teaspoon dried parsley
salt and pepper
1 1/2 quarts water

PICKLE SOUP (OGóRKOWA ZUPA)

Sour flavors are common in Polish cooking, as with the subtle tang of white borscht and red borscht and with the vinegary sauerkraut found in dishes like bigos. Ogórkowa zupa fits perfectly into that tradition. There are as many variations as there are Polish cooks, but the key component - sour dill pickles - is always present. Here, the pickles are grated and gently cooked with garlic and bay leaves, then added along with their brine to a hearty blend of root vegetables in broth. In Polish households, soups usually start off most meals; the generous helping of vegetables in this version makes it a full meal. Serve with some good crusty bread, and feel free to add shredded chicken or even kielbasa if you'd like.

Pickle Soup (Ogórkowa Zupa) image

Steps:

  • In a large pot, combine 6 cups stock with the carrots, celery root, parsnip and potatoes. The vegetables should be covered with stock, so add more as needed. Bring to a boil over high heat. Cover and reduce the heat to medium-low. Rapidly simmer until all the vegetables are fork tender, about 10 minutes. Reduce heat to low.
  • While the vegetables are cooking, coarsely grate the pickles. You should have approximately 1 cup densely packed grated pickles. Melt the butter in a small frying pan over medium heat until it starts to brown. Stir in the garlic and bay leaves and cook until fragrant, about 1 minute. Add the grated pickles and reduce the heat to medium-low. Cover and cook, stirring once, until the pickles become softer, 8 to 12 minutes.
  • Add the pickle mixture to the pot with the vegetables, along with 1 cup of the pickle brine. Taste, then season with salt and pepper. The soup should already be salty from the broth, pickles and their brine, so add salt carefully. Add up to 1/2 cup more brine if you want a more sour taste. Remove and discard the bay leaves.
  • If using sour cream, temper the cream so it doesn't curdle: In a cup, mix the sour cream with 1 to 2 tablespoons of cold water, stirring well after each addition, then repeat with 1 to 2 tablespoons of the soup. Add the tempered cream to the pot. Bring to a simmer and heat through, about 5 minutes. Taste and adjust seasonings.
  • To serve, ladle the soup into bowls. Top with chopped dill and black pepper.

6 to 8 cups vegetable or chicken stock
3 large carrots, peeled and coarsely grated
1 small celery root, peeled and cut into 1/2-inch pieces
1 medium parsnip, peeled and cut into 1/2-inch pieces

3 tablespoons unsalted butter
4 garlic cloves, finely chopped
3 dried bay leaves

Chopped fresh dill, for serving (optional)

TRASH SOUP

I began making this soup when my children were little. It was a good way to clean out the left overs in the frig as well a way to get my kids to eat lots of veggies. My children named the soup and I couldn't change the name though it's not an appetizing title.

Steps:

  • Brown Beef in hot oil in pan.
  • To this add beef Broth with the Knorr soup mix, barley that has been soaked for a few hours in water.
  • Add canned tomatoes and V-8 juice to suit your taste.
  • Add vegetables longest cooking first such as the lima beans, carrots then broccoli, zucchini and squash.
  • Add pasta last. It will swell and get over cooked if you cook too long. I usually turn the soup off and add the pasta, stir and let set about ½ hour. Or you can cook the pasta of choice separate and add to individual soup bowls as you serve it. You can adjust to your personal taste by adjusting V-8, beef broth and water.
