GARLIC BEER MARINATED BONELESS CHICKEN THIGHS

Garlic Beer Marinated Boneless Chicken Thighs image

Steps:

  • Mix all ingredients together except chicken. Then add the chicken and let marinate overnight.
  • Get a grill hot. Remove chicken from marinade and discard the marinate. Grill chicken about 10 to 15 minutes. Turning frequently. Garnish with sliced green onions.

1/4 cup(s) fresh lemon juice
3 tablespoon(s) fresh basil chopped
1 tablespoon(s) each fresh oregano and thyme chopped

green onions for garnish

GREEK LEMON-GARLIC CHICKEN THIGHS AND POTATOES

This simple Greek chicken and potato bake is a great family dinner. Chicken thighs are marinated in a garlic-lemon marinade and then baked in the oven.

Greek Lemon-Garlic Chicken Thighs and Potatoes image

Steps:

  • Combine lemon juice, chicken broth, olive oil, garlic, and oregano in a large resealable plastic bag. Add chicken, seal bag, and shake so chicken is well coated with marinade. Marinate in the refrigerator at least 2 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x11-inch baking dish with cooking spray.
  • Pour chicken and marinade into the prepared baking pan. Arrange potatoes around the chicken.
  • Bake in the preheated oven until potatoes are tender and chicken is no longer pink in the center and the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  • Squeeze the lime juice and measure out 2 tbsp. Chop the green onions. Add the ingredients to a bowl (use a large one if marinating a whole chicken) and pour the beer last. Whisk to combine. Submerge the chicken, coat on all sides, cover with plastic wrap and let marinate.
  • Zest the lime and the tangerines/orange and squeeze their juices in a bowl. If using fresh lemon – zest it and squeeze 1 tbsp of its juice, if preserved lemons – remove the pulp and slice thinly.
