Greek-Inspired Gemelli Pasta Salad image

Steps:

  • Whisk together olive oil, vinegar, garlic, oregano, Dijon, salt, and pepper in a small bowl until well combined.
  • Bring a large pot of lightly salted water to a boil. Add gemelli and cook, stirring occasionally, until tender yet firm to the bite, 8 to 11 minutes. Drain and rinse under cold water. Drain again.
  • Transfer gemelli to a large bowl. Add spinach, cherry tomatoes, feta cheese, Kalamata olives, cucumber, and red onion. Toss with dressing and serve.

Steps:

  • Season chicken liberally with salt and pepper. Boil pasta according to package directions and reserve up to a cup of pasta water. In a large skillet, brown chicken in 1 tlbsp. of the olive oil. Remove chicken when browned and set to the side. Add other 1 tlbsp of olive oil, then add onion and garlic and red pepper flakes, saute about a minute and add mushrooms. Cook another 2 minutes and add diced tomatoes and the white wine. Cook one more minute, then add heavy cream and pizza seasoning. Add more salt and pepper to taste. Add well drained pasta and 3/4 cup to 1 cup of the reserved pasta water along with the chicken. Add basil and shave parmesean and serve.

4 boneless Chicken Breasts, cut into bite size pieces
2 tblsp. Olive Oil
1 lb. Gemelli Pasta
1 can diced tomatoes, prefer S&W w/garlic
1 medium sweet Onion, thinly sliced
2 Garlic cloves, minced
5-6 baby Portabellos or crimini mushrooms, sliced
4-5 Sun-dried Tomatoes, thinly sliced
1/4 tsp. Red Pepper flakes
3/4 cup dry White Wine
3/4 cup Heavy Cream
1 1/2 tsp. McCormick's Pizza Seasoning
5-6 fresh Basil leaves,thinly sliced
Salt and Pepper to taste
Shaved Parmesean to garnish

Steps:

  • Cut 3 slits in each chicken breast to allow marinade to penetrate. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, and paprika for about 30 seconds. Place chicken in a large bowl, and pour marinade over. Using your hands, work marinade into chicken. Cover, and refrigerate overnight.
  • Preheat grill for medium heat, and lightly oil grate.
  • Cook chicken on grill until meat is no longer pink and juices run clear.

Whenever I have leftover chicken breast or cooked turkey I always make this pasta salad it's a favorite in our house. I usually boil up the whole package of pasta shells, but no need to double the dressing recipe, it's enough for the whole package of pasta. Also, I always add in 2 medium chopped firm tomatoes to the salad. You will love this, it's almost like a Greek salad!

Greek-Style Chicken Pasta Salad image

Steps:

  • Cook pasta as directed until al dente, careful not to overcook the pasta, just until chewy and firm, but cooked; drain well.
  • Rinse in cold water.
  • Mix together all pasta ingredients in a bowl.
  • Mix all dressing ingredients; add to pasta mixture; toss well to coat.
  • Let sit in refrigerator for 2 or more hours before serving, to blend the flavours.
  • Sprinkle more Feta cheese on top to garnish.
  • ***NOTE*** since this is a big favorite in my house, I usually just cook up the entire package of pasta, and just increase the vegetable amounts, there is really no need to double the dressing ingredients if you should use the whole package of pasta, as the salad may become oily, but by all means it may certainly be doubled if desired. The bacon is optional, I rarely add it.

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the potatoes in a roasting tin and drizzle with half the oil. Sit the chicken thighs on top, drizzle over the remaining oil and season. Roast in the oven for 30 mins.
  • Add the cherry tomatoes, olives, oregano leaves and feta, then drizzle with the red wine vinegar. Return to the oven for another 25-30 mins until the chicken is cooked through and golden.
