GURKENSALAT (GERMAN CUCUMBER SALAD)
A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

Steps:
- Spread cucumbers and onion on a platter; season with salt and let rest for 30 minutes. Squeeze excess moisture from cucumbers.
- Stir sour cream, sugar, vinegar, dill, and parsley together in a large bowl.
- Fold cucumber and onion slices into the sour cream mixture.
- Refrigerate 8 hours to over night; garnish with paprika to serve.

- In a blender, combine the vinegar, sugar and onion; cover and process until smooth. Add the seasonings; cover and blend well. While processing, gradually add oil in a steady stream until dressing is thickened. Store in the refrigerator.

Steps:
- Peel and wash your onions.
- Thinly slice them.
- Put them in a large bowl, and cover with the sugar.
- Cover it tightly with a lid or plastic wrap and let sit for a 2 to 3 days.
- Decant the resulting liquid into a clean jar or bottle (I use a recycled wishbone salad dressing bottle).
- Discard the onions and sugar (or use in a recipe if you can find one suitable).
- Repeat this until you get the amount of desired liquid.
- You can also add other spices, etc if you wish.
- Serve cold over salad. Enjoy.
- The serving size is guesstimated so you may have more or less.
- Note: This all depends on the sizes of your onions and your sweet tooth. You can add sugar but don't decrease it. If you want to use larger onions, add 1/2 c to 1 c more sugar per onion depending on taste. If your large onions happen to be walla walla's or vidalias wich are both naturally very sweet, don't add more than the reccomended amount of sugar unless you want it super sweet.

SLOW-COOKER GERMAN POTATO SALAD
Warm German Potato Salad in its trademark bacon vinaigrette. This recipe calls for a little help from your slow cooker.

Steps:
- Cook bacon in 12-inch skillet over medium-high heat, stirring frequently, until brown and crisp; remove from skillet with slotted spoon and drain on paper towels. Cook onions and celery in bacon drippings 5 to 8 minutes over medium-high heat, stirring frequently, until crisp-tender. Sprinkle with salt, celery seed and pepper. Cover and refrigerate bacon.
- Layer half each of the potatoes and onion mixture in 3- to 4-quart slow cooker. Repeat layers. Pour broth over top.
- Cover and cook on Low heat setting 5 to 6 hours.
- Remove potatoes from cooker, using slotted spoon. Mix sugar, cornstarch and vinegar in small bowl; stir into liquid in cooker. Stir in bacon. Gently fold in potatoes. Increase heat setting to High. Cover and cook 20 to 30 minutes or until potatoes have thickened. Sprinkle with parsley. Potato salad will hold on Low heat setting up to 2 hours; stir occasionally.
