GLUTEN-FREE VANILLA WAFERS

This is a great gluten-free recipe that can be used for any recipe that calls for vanilla wafers, like rum balls. It is a modified version of a recipe by Bette Hagman.

Gluten-free Vanilla Wafers image

Steps:

  • Mix the first 5 ingredients together in a small bowl.
  • Cream together the margarine, sugar, egg and vanilla.
  • Mix til it looks like pastry dough.
  • Add water if necessary.
  • Shape into 1 inch balls and place 3 inches apart on an ungreased cookie sheet.
  • Flatten with a moistened fork to 1/8 inch thick.
  • Bake at 375ºF for 6 to 10 min or until slightly browned.
  • Makes about 3 dozen cookies.

1 cup rice flour
1/4 cup soy flour
1/2 cup cornstarch
1/2 teaspoon salt
1 teaspoon baking powder
2 teaspoons vanilla
1/2 cup margarine or 1/2 cup butter
1/2 cup sugar, plus
1 tablespoon sugar
1 egg

Gluten-Free Vanilla Wafers image

Steps:

  • Cream butter and sugar together; beat in egg, syrup, and vanilla.
  • Dissolve baking soda in water; add to butter mixture.
  • Mix in flour.
  • Shape dough into small 2" rolls.
  • Wrap and chill overnight (or longer).
  • Slice thinly and place on a parchment-paper lined cookie sheet.
  • Bake in a preheated 400* oven for about 5-6 minutes until VERY lightly golden.
  • Decorate with melted chocolate, if desired.
  • Enjoy!

Spicy Cheese Wafers image

Steps:

  • Place all ingredients into a large bowl. Initially, work through the ingredients with your fingers to distribute evenly, then start working with the heel of your hand, incorporating dry ingredients into mascarpone/egg white to bind. This will take nearly 5 minutes - so don't give up! And don't worry about keeping the rice krispies whole, just smush right down on those babies and work the dough!
  • Separate the dough into 2 pieces and shape each piece into a firm, 6-inch log. Roll up tightly in plastic cling film and refrigerate a minimum of 4 hours before proceeding with recipe.
  • Preheat oven to 400°F Line a baking sheet with parchment paper.
  • Remove first roll of dough. With a sharp knife, cut the dough log into 1/4-inch-thick slices (no thicker!). Place slices on baking sheet and bake in the middle rack of the preheated oven for 18-20 minutes. Repeat with second pan, if necessary. When done baking, place both pans in oven, staggering one up, the other low down, and leave in hot, turned-off oven for another 40 minutes. This will ensure you have a nice, dry, crisp wafer, with a rich, brown colour.
  • Remove and allow to cool completely. Store in an airtight container.

Steps:

  • Mix softened cream cheese and oleo using electric mixer.
  • Blend in flour slowly.
  • Stir in Rice Krispies and Cayenne.
  • Drop batter by teaspoons on ungreased cookie sheet and flatten with fork to make round wafers. (I flatten mine with fork dipped in flour about 3 times).
  • Bake at 375 degrees for 10 minutes.
  • Store in airtight container to keep crisp.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
  • Stir soup and tuna together in a 9x13-inch casserole dish. Place in the oven and set to preheat to 350 degrees F (175 degrees C).
  • While the oven is preheating, heat oil in a skillet over medium heat. Add bell pepper, zucchini, onion, and jalapeno peppers; saute until onion is translucent, about 5 minutes; don't overcook. Add cherry tomatoes for the last couple of minutes.
  • Remove casserole dish from the oven and stir in drained macaroni, and then sauteed vegetables. Stir in processed cheese.
  • Bake, uncovered, in the preheated oven until bubbly, about 25 minutes, stirring halfway through.
