Steps:
- Whisk together Egg, Butter, Sugar, Vanilla extract until all mixed well.
- Sift in Flour, Baking Powder, Xanthan Gum & Mixed Spice. Add Sultanas.
- Using your hands mix all ingredients well to form a ball of dough. (if still wet add a little extra flour).
- Using your hands create small balls (approx 30-40g) , using the palm of your hand flatten to your required thickness. Cook on a medium hot griddle either side for 3 minutes or until golden. Dust with icing sugar.
