TOMATO-GOAT CHEESE SPREAD
A good friend shared this recipe with me. It is super easy and so delicious. Guests will love it! It's best served with crackers that aren't strongly seasoned. -Linda Alexander, Madison, Wisconsin

Steps:
- Drain tomatoes, reserving 3 tablespoons of oil., In a small skillet, heat reserved oil, tomatoes and garlic over medium-high heat. Cook and stir 5 minutes or until garlic is golden and tomatoes are heated through. To serve, place cheese on a serving plate. Pour tomato mixture over cheese. If desired, sprinkle with parsley. Serve with crackers.

WARM GOAT CHEESE
Steps:
- Slice the goat cheese into 12 (1/2-inch-thick) slices. Dip each slice into the egg wash and then into the bread crumbs, being sure the cheese is thoroughly coated. Place the slices on a baking rack set on a sheet pan and chill for at least 15 minutes.
- Heat the oil and butter in a medium saute pan over medium-high heat. Add the goat cheese slices and cook on both sides until browned on the outside but not melted inside.
GOAT CHEESE SPREAD (FROM THORNTON WINERY)
On my first date with my husband we went wine tasting in the Temecula Valley. The Thornton Winery has a champagne tasting bar where they serve you a goat cheese spread with slices of fresh bread. When I asked about the recipe they quickly came back with a copy of it for me from behind the bar. It seems they keep a stack there due to the many requests they get. Enjoy!

- In a small bowl with a fork, mash goat cheese with enough cream to make a spreadable consistency. Add basil, green onion, garlic, and salt, to taste. Mix well. Garnish with fresh nasturtium flowers, if available, and serve with warm tortillas alongside. To eat, spread a few spoonfuls of goat cheese mixture inside a tortilla and roll up.

- Pre-heat oven to 350 degrees.
- Lightly coat small baking dish with olive oil.
- Drain tomatoes of most of the juice.
- In a small bowl combine tomatoes, tomato paste, balsamic vinegar and pesto. Place goat cheese in baking dish and top with tomato mixture.
- Bake until goat cheese ismelted and tomato mixture is bubbly.
- Sprinkle pine nuts over the top and drizzle lightly with olive oil.
