GOOF PROOF PIE CRUST
This recipe was given to me by a family member as an easy way to make pie crust. I have not tried it yet...but have posted it here in case I lose the piece of paper it was written on.

Steps:
- Blend flour and salt with shortening until mixture is uniformly crumbly.
- Add the egg, lightly beaten with the water and vinegar,.
- Mix quickly until the mixture holds together.
- Roll out on a floured surface.
- Makes enough dough for the top and bottom crust of a 9 inch pie.
- Bake at 400 degrees until lightly browned if you need a prebaked pie shell.

FOOL PROOF PIE CRUST
My favorite pie crust! Makes 2 (9 inch) and 1 shell. If you're nervous about making your own pie crust - this is the perfect recipe for you! Comes out great every time!

Steps:
- Mix first four ingredients.
- In separate dish, beat remaining ingredients.
- Combine the mixtures, stirring with a fork.
- Chill 15 minutes before rolling out. Dough can be left in the refrigerator up to 3 days or it can be frozen until ready to use.
PERFECT PIE CRUST
This is the recipe that I have used for more than 45 years. I always get compliments on how tasty and flaky it is.

Steps:
- Sift measured flour and salt into a bowl.
- Pour oil into glass measuring cup and add cold milk to make 3/4 cup liquid.
- Pour liquid into bowl and stir with a fork to mix well.
- Stir until it forms into a soft ball.
- Save half the dough to use later.
- Roll remaining half of dough into circle between two sheets of wax paper.
- Peel off top layer of wax paper.
- Place pie pan upside down on top of rolled out dough.
- Slide hand under bottom wax paper with top hand lightly on pan.
- Flip pan, crust and wax paper over gently.
- Crust and wax paper will gently settle into pan.
- Then peel second wax paper off crust.
- Fit crust into pie pan, make standing rim, and prick with fork.
- I use pie weights to keep shell flat.
- Bake in oven 450°F for 8- 10 minutes.

Steps:
- Place flour in large bowl. Cut in cream cheese and butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
- Shape dough into ball; flatten into disk. Wrap tightly with plastic wrap. Refrigerate 1 hour.
- Place dough between 2 lightly floured sheets of waxed paper; roll into 10-inch round. Discard top sheet of waxed paper. Spray 9-inch pie plate with cooking spray; invert over dough. Flip pie plate, holding pie plate and dough together. Discard second sheet of waxed paper. Gently press dough onto bottom and up side of pie plate. Flute edge of crust, if desired, then use as desired.

- Spray sides and bottom of 9-inch pie pan with non-stick cooking spray.
- In medium bowl, combine all ingredients; mix well.
- Press into prepared pie pan.
- Bake for 8 to 10 minutes or until golden brown.
- Cool; chill or freeze as filling requires.
- Fill with packaged pie filling mixtures, chilled cheesecake fillings, frozen yogurt or ice cream, as desired.
