WILD RICE SOUP

- In a medium saucepan, combine the rice, oil and water; bring to a boil. Reduce heat; cover and simmer for 30 minutes. , Meanwhile, in a Dutch oven, cook the onion, celery and carrot in butter until vegetables are almost tender. Stir in flour until blended; cook and stir for 2 minutes. Slowly stir in broth and undrained rice. Bring to a boil; cook and stir until slightly thickened, 2 minutes. Reduce heat; stir in the cream, rosemary and salt. Simmer, uncovered, until rice is tender, about 20 minutes.

SLOW COOKED GOOSE
A very delicious goose dish. Good with tame and wild goose meat, as it will remove the wild-game taste. Great recipe that can cook all day while you're at work. When finished it makes an excellent gravy that is great with mashed potatoes. Also, my wife and kids couldn't stand the taste of goose until I made this recipe, now they love it.

- Mix celery, carrots, cream of celery soup, cream of chicken soup, cream of mushroom soup, mushrooms, sage, rosemary, and thyme in a bowl.
- Put goose pieces in a slow cooker. Pour soup and vegetable mixture over the goose.
- Cook on High until goose is tender, 6 to 8 hours.

GOOSE STEW WITH BARLEY AND CELERY ROOT
I originally designed this recipe for wild snow geese, and because many of California's snow geese spend their summers on Wrangel Island, near Siberia, it seemed fitting to give the stew a Russian feel. But of course the legs of any goose or duck, wild or domesticated, will work here. It's important to remove the meat from the bones before you serve this stew, otherwise everyone will be picking through their bowls for small, sharp objects. It takes only a few minutes, and your family and friends will thank you for it. This stew keeps well in the fridge for a week, though the grain in it will continue to swell over time, absorbing moisture and making this more like a French potage. It also freezes well.

- Trim the legs of any excess fat. In a Dutch oven or other large, heavy pot with a lid, heat the duck fat over medium-high heat. Add the legs and brown them, salting them as they cook. Take your time to get them well browned. Transfer them to a plate and set aside.
- Add the onion and mushrooms to the pot, turn the heat to high, and stir to combine. Sauté for 6 to 8 minutes, until the onion begins to brown. Add the marjoram, return the legs to the pot, and then pour in the stock. Bring to a simmer, cover, and cook for 2 to 3 hours, until the meat is tender. If a lot of fat begins to accumulate on the surface of the stew, skim it off.
- When the goose legs are tender, remove them, let them cool a bit, and then pull all of the meat off the bones. Return the meat to the pot. Add the barley, carrots, and celery root, stir well, and cook for about 30 minutes, until the barley and celery root are tender. Season with salt.
- Serve garnished with the dill and a sprinkle of black pepper, and top each bowl with a dollop of sour cream at the table.
HEARTY DUCK AND WILD RICE SOUP

- Cut the duck into serving pieces. Crack the backbone in half lengthwise. Cut away and discard any peripheral fat from the duck pieces. Sprinkle the pieces with salt and pepper.
- Heat a heavy kettle and add the duck pieces skin side down. Add as many pieces in one layer as the kettle will hold. Cook these pieces until they are nicely browned, about four or five minutes. Continue until all the pieces are browned. As the pieces are cooked, strain off and discard the fat.
- Return all the pieces to the kettle and add the onion, coarsely chopped carrot and garlic and cook three minutes, stirring constantly.
- Add the broth and bring to the boil. Simmer about one hour or until the liquid is reduced to about six cups. Skim off any scum and fat from the top as it accumulates.
- Remove and reserve the meaty duck pieces, such as legs, breast, thighs and so on. Discard the bony parts, such as the backbone.
- Strain the six cups of duck soup into a saucepan and bring to the simmer.
- Remove the meat from the reserved duck pieces and cut it into small dice. There should be about two cups of meat.
- Cut the mushrooms into small squares. There should be about two cups.
- Put the mushrooms, diced meat, wild rice, leeks and carrots into a kettle and pour the hot soup over them. Let simmer about two minutes. Serve piping hot.
NORTH WOODS CHICKEN AND WILD RICE SOUP - OAMC
This recipe comes from the cookbook "Don't Panic - Dinner's in the Freezer" . It is really delicious. Good with crusty bread and a green salad. I must admit to using the pre-cooked bacon crumbles (about 1/2 cup) instead of cooking and crumbling the bacon. Sometimes it is just easier! Make sure it is real bacon though, not the imitation bacon bits! Enjoy.

- Melt butter in a large saucepan.
- Add onion and celery and saute until tender.
- Stir in flour, salt, thyme and paprika. Cook for about 1 minute until bubbly.
- Add chicken, broth, worcestershire, sherry, milk and half & half. Cook, stirring, until it thickens slightly.
- TO EAT RIGHT AWAY: Fold in rice and bacon pieces. Cook until heated through.
- Ladle into bowls and serve.
- TO FREEZE:.
- Allow to cool. Fold in rice and bacon.
- Place in a freezer bag and seal. Label and freeze.
- TO REHEAT: Thaw and heat in a saucepan until bubbly. Ladle into bowls and serve.

GOOSE & WILD RICE SOUP

- Cook bacon in large saucepan until crisp, remove bacon, leave grease. Cook 2 cups goose breast in bacon grease, set on paper towel. Cook mushrooms in same pan. In separate pot, add chicken stock, onions, carrots and garlic, cook until tender. Add cream of potato soup (and potatoes) and stir. Add half & half, bacon, goose, mushrooms and wild rice. Simmer for 45 minutes, remove from heat, and serve with shredded swiss cheese and minced parsley.

- If you haven't made the broth beforehand, you'll need that first. My recipe is here. You could of course use store-bought beef broth, but it will not be the same. Either way, once you have the broth, bring it to a gentle simmer and steep the allspice or cardamom in it for at least an hour. If you tie the spices up in a cheesecloth bag, it's easier to fish them out later -- and you can stew the onion in the broth at the same time. Otherwise, you will need to strain the broth and then stew the slice onion for 20 more minutes or so, until they soften.
- While the spices are steeping in the broth, put a large pot of water on to boil for the dumplings. To make the dumplings, mix everything but the oil in a bowl, adding enough milk so the batter is about as loose as pancake batter. Use a colander with wide holes or a spaetzle maker to drop the batter into the boiling water. Boil until they float, then 1 minute more. Remove with a slotted spoon and put them in one layer on a cookie sheet. Drizzle some oil over them so they don't stick.
- By now you should be ready to rock. Set out the herbs, radishes, horseradish and vinegar on the table where everyone can grab them. Get a bowl for everyone. Put some dumplings in each bowl, then some of the shredded, cooked goose meat. Lay some of the thinly sliced goose breast on everything. Bring the broth with the onions still in it to a rolling boil.
