NUTTY GRANOLA

Nutty Granola image

Steps:

  • Preheat the oven to 300 degrees F. Spray a large baking sheet with cooking spray.
  • In a medium bowl combine the oats, nuts, maple syrup, salt, cinnamon and the raisins, if using. Spread the mixture onto the baking sheet and bake until golden brown, stirring occasionally, about 30 minutes. Transfer the sheet to a cooling rack and let cool completely. Store in the refrigerator in an airtight container.

3 cups old-fashioned oats
1/2 cup chopped raw, unsalted walnuts
1/2 cup chopped unsalted almonds
1/2 cup chopped unsalted pecans
1/2 cup maple syrup
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup raisins, optional

Grama Nellie's Peanut Butter Fudge image

Steps:

  • Combine sugar, milk and butter; bring to a boil and cook to soft ball stage. Remove from heat.
  • Beat in peanut butter, marshmallow cream and vanilla by hand or hand mixer.
  • Pour into 9x13 buttered pan.
  • Enjoy.

NUTTY GRANOLA

A very easy-to-make granola recipe that is delicious and the best snack ever. All the girls at my office eat this with yogurt every day. It's awesome! If you don't have some of the dry ingredients, just add more of what you do have. Walnuts are a fine substitute for pecans. You can also try dried blueberries instead of or with the cranberries.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir oats, almonds, coconut, pumpkin seeds, sunflower seeds, pecans, and salt, together in a large bowl.
  • Stir butter and honey together in a small saucepan over low heat until the butter is fully melted.
  • Stir vanilla extract into the melted butter.
  • Pour butter mixture over oats mixture; stir until evenly coated.
  • Spread the mixture onto 2 large baking sheets into single, even layers.
  • Bake in preheated oven 10 minutes. Remove from oven and gently turn the granola. Continue baking until golden brown, about 10 minutes more.
  • Set granola aside to cool to room temperature; transfer to a large bowl.
  • Gently fold cranberries into the granola.

Easy Fruit and Nut Granola image

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the oats and nuts in a large bowl. In a separate mixing bowl, combine the sugar, oil, vanilla, salt and 1/4 cup water. Pour the liquid mixture over the oat mixture and stir until combined. Pour onto two baking sheets and spread evenly. Bake until golden brown, 25 to 30 minutes, stirring halfway through.
  • Pour the cooked oat mixture into a bowl and stir in the raisins and cherries. Let cool. The granola will keep in an airtight container at room temperature in a cool, dry place for up to 3 weeks.

12 ounces old-fashioned rolled oats
12 ounces raw nuts, such as blanched almonds and walnuts
1/2 to 1 cup sugar, depending on desired sweetness
