CHEF JOHN'S RHUBARB CRISP

If you've never tried rhubarb before, this is the recipe for you. The sweet, crisp topping taking the edge off the tart, tangy fruit, both benefiting from a creamy scoop of vanilla ice cream. This is a great, old-fashioned American dessert. You can substitute all-purpose flour for the whole wheat flour.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
  • Combine rhubarb, strawberries, white sugar, lemon juice, and lemon zest together in a bowl.
  • Stir brown sugar, whole wheat flour, oats, salt, and cinnamon together in a bowl. Cut cold butter into oat mixture with a pastry blender until the mixture resembles coarse crumbs and butter pieces are pea-sized.
  • Pour rhubarb mixture into prepared baking dish. Spread oatmeal mixture evenly over the top.
  • Bake in the preheated oven until golden and bubbling, about 35 minutes.

Easy Rhubarb Crisp image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix flour, brown sugar, oats, butter, and cinnamon together in a bowl until crumbly. Press 1/2 of the oat mixture into the bottom of prepared baking dish. Sprinkle rhubarb over oat mixture.
  • Combine white sugar, water, cornstarch, and vanilla extract in a saucepan over medium heat; cook and stir until thick and clear, about 5 minutes. Pour sugar mixture over rhubarb. Sprinkle remaining oat mixture over rhubarb.
  • Bake in the preheated oven until crisp is lightly brown and bubbling, about 1 hour.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix 1 cup flour and confectioners' sugar together in a bowl; cut butter into flour mixture using a pastry cutter or two forks until mixture is crumbly. Press flour-butter mixture into an 8-inch square pan.
  • Bake crust in the preheated oven until golden brown, 15 to 20 minutes.
  • Mix white sugar, 1/4 cup flour, baking powder, and nutmeg into the beaten eggs. Fold rhubarb into egg mixture; pour rhubarb filling into the baked crust.

Steps:

  • In bowl combine sugar, 1 T flour and cinnamon.
  • Add rhubarb; toss.
  • Place in a greased 9x13 inch baking dish.
  • In bowl combine brown sugar, baking powder, baking soda, and remaining flour; stir in butter.
  • Sprinkle over rhubarb.
  • Bake in preheated 350 degree oven for 40 minutes or until rhubarb is tender.
