GRANDMA'S APPLE COBBLER
Steps:
- 1. Preheat oven to 350 degrees F.
- 2. For Topping: Using an electric mixer on medium speed, beat together the butter and 1 cup of sugar in a large bowl until smooth and creamy. Blend in egg and vanilla. Stir in flour, oats and 3/4 tsp. of cinnamon until thoroughly blended.
- 3. For Filling: In a separate bowl, combine the sliced apples, 3/4 cup of sugar, cornstarch, 1 1/2 tsp. of cinnamon and nutmeg. Mix well.
- 4. Evenly spoon the apple mixture into a 3 quart casserole dish. Spoon topping mixture evenly over apple filling.
- 5. Bake for 1 hour or until golden brown.
- 6. Serve warm by itself or over vanilla ice cream.

Simple, old-fashioned apple crisp. If you want something simple and homemade on hand, you can double the filling recipe (I use a 5-pound bag of Granny Smith apples) and freeze half of it.

- Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x13-inch baking dish.
- Combine apples, sugar, cinnamon, and nutmeg for filling in a bowl; transfer to the prepared baking dish.
- Combine brown sugar, flour, oats, butter, and cinnamon for topping in a large bowl. Sprinkle on top of filling.
- Bake in the preheated oven until golden and bubbly, about 1 hour.

- Preheat oven to 400°; butter a deep 9 x 13 inch baking dish.
- Place the sliced apples in a large bowl and sprinkle them with lemon juice.
- Mix the flour, cinnamon, and sugar together in a separate bowl.
- Sprinkle the cinnamon mixture over the apples and toss gently to coat.
- The dough: In a bowl, mix the flour, sugar, and baking powder; cut in the shortening using a pastry blender until the mixture becomes crumbly.
- Add the milk and stir with a fork.
- Form the dough into a ball and turn out onto a lightly floured surface.
- Roll the dough out to a size that is 1/2 to 1 inch larger than your baking pan.
- Pour the apple mixture into the prepared dish and dot with the pieces of butter.
- Place the dough over the top of the apple filling and seal the edges.
- Cut vents in the top of the crust to allow steam to escape while baking.
- Bake for 10 minutes; decrease oven temperature to 375° and bake for another 30-40 minutes, or until the crust is lightly browned on the top and the apples are tender.

- 1. Make two crusts, one for the bottom, and one for the top of a 13x9 baking pan.
- 2. Preheat oven to 350 degrees. Place bottom crust in baking pan. Peel and slice apples and fill almost to the top (or according to your taste) of the 13x9 pan. In a one cup measuring cup, fill it to half a cup with sugar, add the two tbsp. flour, and mix well with a fork. Then add sugar to that mixture until it reaches the 1 cup mark. Pour into medium bowl and add another 1/2 cup of sugar. Mix, sugar, flour and spices with a whisk to blend. Sprinkle over apples. Spot with butter and add 1 cup of water to pour over apples.
- 3. Place top crust over apples and crimp sides closed. Using a fork, punch holes in top layer. Bake until brown and bubbly.
- 4. NOTE: If apples are hard, make slices thinner.

- Preheat oven to 425°F. Toss together apples, brown sugar, and all-purpose flour in a large bowl. Melt 4 tablespoons of the butter in a large skillet over medium-high. Add apple mixture, and cook, stirring often, until apples are tender and syrup thickens, 20 to 25 minutes.
- Meanwhile, stir together self-rising flour and 2 tablespoons of the granulated sugar in a large bowl. Cut 1/2 cup cold butter cubes into self-rising flour mixture with a pastry blender or fork until mixture is crumbly and resembles small peas; freeze 10 minutes.
- Remove apples from heat; stir in lemon zest and juice, cinnamon, and salt. Spoon apple mixture into a lightly greased 8-inch square (2-quart) baking dish. Bake in preheated oven 15 minutes, placing a baking sheet on oven rack directly below dish to catch any drips.
- Meanwhile, make a well in center of flour mixture. Add 3/4 cup cream; stir just until dough comes together, adding additional cream up to 1 cup, 1 tablespoon at a time, if needed. Turn dough out onto a lightly floured surface, and knead lightly 3 or 4 times. Roll or pat dough to 3/4- to 1-inch thickness. Cut with a 2 1/2-inch round cutter; reroll scraps once, and repeat process to make 9 biscuits.
