GRANDMA'S BREADED PORK STEAK
This recipe is a family favorite that was handed down by my grandmother. Pork steak is preferred to pork chops. They always come out crisp on the outside and melt in your mouth tender on the inside!

Steps:
- Whisk eggs and pour into pie plate or like container.
- Crush crackers. (I do this by putting crackers into a ziplock bag and then use a rolling pin) Do not use food processor unless you do not like the texture of the cracker pieces. Then pour crackers into a separate container.
- Season the pork steaks with salt and pepper. Dip in the egg and then dredge in the crackers, making sure they are coated well on each side.
- Pre heat oven to 350 degrees. Add oil to a heated skillet and brown steaks on each side 2-3 minutes to crisp and brown the crackers. Put onto a baking sheet (Do not cover) Bake in oven 30-45 minutes (Depending on the thickness of the steaks.)
GRANDMA VANDOREN'S WHITE BREAD
What Grandma used to make! Our family's favorite. The recipe was never written down (that I know of) until she shared it with me when she was in her 90's.

- In a large bowl, combine warm water, yeast, salt, oil, sugar, and 4 cups flour. Mix thoroughly, and let sponge rise until doubled in size.
- Gradually add about 4 cups flour, kneading until smooth. Place dough in a greased bowl, and turn several times to coat. Cover with a damp cloth. Allow to rise until doubled.
- Punch down the dough, let it rest a few minutes. Divide dough into three equal parts. Shape into loaves, and place in three 8 1/2 x 4 1/2 inch greased bread pans. Let rise until almost doubled.
- Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes. The loaves may need to be covered for the last few minutes with foil to prevent excess browning.

BREADED FILLETS OF SOLE

Steps:
- Put the fillets on a flat surface. There may be a small bone line running partly down the center of each fillet. If so, cut on both sides and discard it.
- Beat the egg, salt, pepper, water and one tablespoon of oil in a flat dish.
- Put the flour in a flat dish and toss the fillets in it. Shake off excess.
- Put bread crumbs in a flat dish.
- Dip the floured fillets, one at a time, in the egg mixture to coat well. Dip them on both sides in the bread crumbs and pat lightly to make the crumbs adhere.
- Heat the remaining one-third cup of oil in a heavy skillet and add enough breaded fillets to make one layer without crowding. Cook until golden brown on one side, about one and one-half to two minutes. Turn and cook about one and one-half minutes on the second side. The cooking times will depend on the thickness of the fish. It may be necessary to add more oil if it disappears. As the fillets are cooked transfer them to a warm serving platter. Continue cooking until all the fillets are done.
- Pour off the oil from the skillet and wipe it out with paper towels.
- Put the butter in the skillet and swirl it around over high heat until it starts to foam. Continue cooking until it starts to become hazelnut brown. Pour this over the fish. Sprinkle the fish with the lemon juice and serve.
