GRANDMA'S OATMEAL BARS
While I was growing up, I enjoyed my grandma's oatmeal bars every Christmas. This recipe reminds me of her and Christmastime as a child. And now I fix the bars for my family. -Nancy Hawkins, Brookville, Indiana

Steps:
- Preheat oven to 350°. In a small saucepan, combine dates, water and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until thickened and dates are tender, stirring constantly, 7-9 minutes. Remove from heat., In a large bowl, combine flour, oats, brown sugar, vanilla, baking soda, salt and almond extract. Cut in shortening until crumbly. Press half onto bottom of a greased 13x9-in. baking dish. Carefully spread with date mixture. , Sprinkle remaining crumb mixture over filling; press down gently. Bake until lightly browned, 25-30 minutes. Cool on a wire rack. Cut into bars. If desired, serve with whipped cream.

GRANDMA'S MISTAKE BARS
My Grandma used to make these every year for Christmas, and I thought I had lost the recipe but my mom found it the other day, so I thought I sould post it so I never lose it again!

Steps:
- Cream together oleo and brown sugar, then add flour, salt, baking soda and oatmeal. Mix until it is crumbly. Put 1/2 the mixture into a greased 9x13 baking pan.
- Melt 1 stick of oleo, chocolate chips and sweetened condensed milk together. Stir until smooth.
- Pour chocolate mixture over oatmeal mixture, then drop spoonfuls of the rest of the oatmeal mixture on top. Bake at 350 for 25 minutes.

Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

MY GRANDMA'S PUMPKIN BARS
This recipe is from the 1940's, from my Grandma's collection. I make them every year for Halloween and Thanksgiving. Wonderful moist texture and frosting, makes a large cookie sheet. May decorate with candy corn for Halloween!

- Bars.
- Use electric mixer.
- Mix sugar and oil, add eggs and pumpkin.
- Add dry ingredients, mix well, pour into greased jelly roll pan. Bake at 350 for 30 minutes. Cool.
- Frosting.
- Beat with mixer, spread on cooled bars.
- Oh so yummy!
GRANDMA'S FRUIT BARS
The aroma is almost Christmas-like because of the cinnamon and cloves. The bars are sweet and spicy and the topping of a light confectioners icing is a nice touch. I think this would also be delicious served with whipped cream. I would take this to a potluck or even a bake sale!

Steps:
- 1. Add baking soda to hot coffee. Set aside. Using a regular size cookie sheet, spray with Pam baking spray.
- 2. Cream sugar, shortening and eggs.
- 3. Add dry and liquid ingredients alternately.
- 4. Add raisins. You can substitute dates or candied fruit. Add nuts and blend well.
- 5. Bake at 350 degrees. Check with toothpick inserted in center. Cool completely. Frost when cool with confectioners frosting.
- 6. Optional - Cut up walnuts and sprinkle on top of frosting.
