GRANDMA CAROL'S SOUTHERN SWEET POTATO CASSEROLE
The best sweet potato casserole ever! This recipe was handed down to me by my mother-in-law. I get so many compliments on this dish and so many requests for this recipe. This really makes me look forward to Thanksgiving! You can use whatever chopped nuts you prefer.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir mashed sweet potatoes, white sugar, 1/2 cup butter, milk, eggs, cinnamon, and vanilla together in a large bowl until smooth; transfer to a casserole dish.
- Mix brown sugar, pecans, coconut, and 1/2 cup butter in a bowl; spread atop the filling.
- Bake casserole in preheated oven until topping is golden brown, about 30 minutes.

Steps:
- 1. Boil sweet potatoes until they are soft. Peel and mash while they are still hot. In a large bowl, Mix potatoes, 1 stick of butter (cut it into cubes and it will melt nicely), coconut, beaten eggs, vanilla, 1/2 cup of the brown sugar and the white sugar.
- 2. In a separate bowl, melt the other stick of butter and add the remaining brown sugar, the chopped pecans, and the corn flakes. Mix well. Note: I double this step because I really like the crunchy stuff.
- 3. Grease a 9x13 baking dish with butter or spray or whatever you like to use. I use a casserole dish and butter. Put in potatoes. Layer crunchy topping on top of the potatoes and bake at 325 until bubbly and golden brown. Usually about 30 minutes.

- 1. Mix the mashed Sweet Potatoes ,butter,salt vanilla extract,sugar,milk,and the beaten eggs together and pour into a casserole dish that has been sprayed with non stick spray....Then MIX the topping and spread on top of the Sweet Potatoe Casserole .Bake at 350 degrees and Bake for 35 to 40 minutes ...
- 2. Pour Sweet Potatoe mixer into casserole dish.
- 3. Mix topping for casserole.
- 4. Sprinkle mixed topping over the casserole and bake at 350 degrees for 35 to 40 minutes.
- 5. After it comes out of the oven, let it set for 20 to 25 minutes before serving.

- Preheat oven to 375 degrees F (190 degrees C). Wrap sweet potato in aluminum foil.
- Bake sweet potato in the preheated oven until easily pierced with a fork, about 1 hour. Set aside to cool.
- Whisk white sugar and canola oil together in a bowl. Add eggs; mix well. Sift flour, cinnamon, and nutmeg into sugar mixture. Slowly whisk water into flour-sugar mixture until incorporated.
- Peel sweet potato; mash into the batter. Fold in 1/2 cup chopped pecans.
- Reduce oven temperature to 320 degrees F (160 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Pour batter into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 1 hour.
- Heat brown sugar and butter in a small saucepan over low heat until sugar is dissolved, about 5 minutes. Add 1/2 cup chopped pecans and stir to combine. Remove from heat. Pour glaze over bread.

- Combine butter, vanilla extract, and salt in a bowl. Mix brown sugar and white sugar together in another bowl.
- Layer potatoes and sugar mixture in the bottom of a slow cooker. Pour the butter mixture over the top.

- Place sweet potatoes and orange peel into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until soft, about 10 minutes. Drain well and let cool. Discard orange peel.
- Preheat oven to 400 degrees F (200 degrees C). Line a 9-inch pie plate with pie crust.
