LICORICE CARAMELS

This is a mouthwatering candy recipe that is as close to the Callard and Bowser licorice flavored caramels as you can get. I got this recipe from my sister, and once you have a piece, you can't stop eating them!

Steps:

  • Line a 9x9 inch dish with buttered foil.
  • In a large saucepan over medium heat, melt butter. Stir in sugar, milk, corn syrup and salt. Bring to a boil, stirring frequently. Continue to heat, without stirring, to 242 to 248 degrees F (116 to 120 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat and stir in anise and food coloring. Pour into prepared pan. Let cool completely, several hours.
  • To cut, turn out of pan and peel away foil. Cut with a buttered knife. Wrap pieces in waxed paper or candy wrappers.

Steps:

  • 1. In a heavy pan, mix together all ingredients (EXCEPT: the food coloring and flavoring). Cook stirring constantly until it reaches 235 degrees (Firm Ball Stage).
  • 2. Add the food coloring and flavoring. Stir for 1 minute.
  • 3. Pour into 1 or 2 rectangular cake pans (depending on how thick you want to make the candy). Cool. Cut into desired size cubes. Wrap in wax paper or plastic wrap.
  • 4. *** Just put a light dusting of powdere sugar in the pans. *** You can sprinkle a little powdered sugar on the cooled finished product to make less sticky for wrapping in wax paper.

  • Use the extra butter to grease two heart-shaped silicone molds with 15 cavities each (or use a bread loaf pan lined with parchment paper--butter the parchment, too).
  • Clip a (calibrated) candy thermometer to the side of a heavy 2-quart saucepan, being sure that the gauge is not resting directly on the bottom of the pan. Add the 4 T. of butter, sugar, corn syrup, condensed milk, molasses, and salt. Turn the heat to medium and bring to a gentle boil. Stir the mixture frequently to prevent scorching in the corners.
  • Once the mixture reaches 238° F, remove it from the heat, and immediately stir in the black food gel. Once it's fully incorporated, stir in the anise extract.
