Steps:
- Wash the beans,trim stems and ends and snap beans in half and set aside.
- Cook the bacon in large saucepan until crisp remove the bacon reserve the drippings in pan crumble the bacon and set aside.
- Add water and remaining 3 ingredients to the pan bring to boil over high heat add beans and cover.
- Reduce heat to medium cover and cook for 15 minutes.
- Sprinkle with bacon and serve with a slotted spoon.
GRANDMA'S GREEN BEANS

Steps:
- Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
- Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
- Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.
GRANNY'S BBQ BEANS
Steps:
- Heat a smoker for cooking at 225 degrees F.
- Add pork and beans, black beans, kidney beans and butter beans to a foil pan and set aside.
- Brown the beef in a large skillet, then drain the grease and add the beef to the beans. Cook the bacon in the same skillet, then add the bacon to the beans. Add the ketchup, brown sugar, vinegar, onion, jalapeños, salt and pepper to the beans.
- Place the foil pan in the smoker and let smoke until there is a nice bark covering the top of the beans, 4 to 5 hours.
GRANNY'S POLE BEANS

- Cut the beans into 1 inch pieces and place in a dutch oven. Add the onion, garlic, salt, red pepper flakes, bay leaf, and enough chicken stock to generously cover. Cover the pot and bring the beans to a boil. Turn the heat to low and simmer, covered, until a knife goes straight through the beans, about 30 minutes. The beans should be very tender but not mushy.
- Turn off the heat and add in the vinegar. Taste and add salt if needed. Uncover and let the beans cool to room temperature in their liquid. Be sure to cook the beans at least 2 hours in advance of serving. The cooling time allows to flavors to come together. Skim off fat and reheat before serving.

POLE BEANS AND NEW POTATOES
Simple yummy southern tasting side dish. Pole beans are larger than everyday green beans (Kentucky wonder is a favorite variety). Try to find tender beans that do not have a heavy "string"; they will cook in the same amount of time as the potatoes.

- String the beans.
- Peel the potatoes or cut them in half.
- Put the beans in the bottom of a heavy saucepan.
- Add the potatoes, ham hock, and water.
- Simmer, covered, until the potatoes are done, about 30 to 45 minutes.
KENTUCKY WONDER BEANS
These are an old soul food heirloom favorite in the garden and what I remember eating frequently as a child. I grew the pole variety this summer and they are super prolific/productive. They taste like nothing you buy in a store - super meaty, tender, long-lasting flavor. And now they are a favorite in my own family. The beans will cook in this semi-salty broth, and won't be as salty as is the broth.
