Steps:
- Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
- Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

- Combine all ingredients except cilantro in a 2-qt. microwave-safe bowl.
- Cook on high 5 minutes, remove from microwave and let stand about 5 minutes more.
- Fluff with fork, stir in cilantro, and serve.

Pour tomato sauce over the rice and cook, stirring, for 1 minute.
- Stir in broth and bring to a boil. Reduce to a simmer, cover and cook until the rice is cooked, about 15 minutes. Stir in vegetables and serve.
