Steps:

  • Cut the cheese into triangles that are a little more than 1/2-inch-thick. Put the flour on a large plate.
  • Pour olive oil about 1/4-inch deep in a medium skillet. Heat the oil over medium-high heat until very hot, but not smoking.
  • Dredge the cheese in the flour on both sides and fry, turning once, until golden brown on both sides and soft in the center, about 2 minutes per side for halloumi or 1 minute per side for a creamier feta. Drain on paper towels.
  • Serve the cheese hot, sprinkled with the oregano leaves and with lemon wedges on the side.

8 ounces halloumi cheese or firm feta
1 cup all-purpose flour
About 1 cup olive oil
2 tablespoons fresh oregano leaves
Lemon wedges, for serving

FLAMING GREEK CHEESE (SAGANAKI)

This flaming cheese ritual was started by restaurateurs in Chicago, who encouraged customers to yell, 'Opa!' as the plate was being ignited. You can recreate the tradition at home in minutes, whether you'd like to spark up a little romance with an old flame on date night or just try a fast and fun cheese dish on a chilly weeknight. Serve with sliced fresh or grilled bread.

Steps:

  • Brush each side of the kasseri cheese with water. Dredge both sides in flour, making sure the surface is completely covered.
  • Preheat a well seasoned cast iron skillet on medium-high heat until smoking. Pour in olive oil. Carefully place the floured cheese in the hot oil. Cook until cheese begins to ooze and a golden brown crust forms, about 2 minutes. Quickly flip cheese over with a spatula. Fry until bottom is golden brown, about 30 seconds more.
  • Remove skillet from heat and transfer onto a napkin-lined plate. Pour brandy over the cheese. Light the brandy using a fireplace lighter. Now you can exclaim "Opa!" and marvel at the fire. Squeeze some lemon juice on top to extinguish the last few flames and garnish with parsley.

FRIED FETA GREEK SALAD PITAS

These are inspired by fried mozzarella sticks, briny Greek salad and falafel pitas. The only thing better than fried cheese on a salad...is stuffing that salad in a fluffy pita. The result is a party of textures, flavors and colors in one delicious handheld bite.

Steps:

  • Combine the olives, cucumbers, red pepper and onion in a mixing bowl. Add the lemon juice, olive oil, a big pinch of salt and some black pepper and toss to combine. Allow to marinate in the refrigerator while you make the feta.
  • For the feta, prepare a dredging station. In a rimmed dish, add the flour. In a separate rimmed dish, whisk the egg with a splash of water. In a third separate dish, whisk together the breadcrumbs, 1/2 teaspoon salt and a few turns of black pepper. Coat each chunk of feta in the flour and tap off the excess. Dunk in the beaten egg and then coat in the breadcrumbs, tapping off the excess.
  • Heat a 1/4-inch layer of olive oil in a 10-inch nonstick skillet over medium heat. (Test to see if it is hot enough by sprinkling a bit of breadcrumb in the oil. If it sizzles right away, it's ready.) Carefully place the breaded feta cubes in the oil and fry in batches for 90 seconds to 2 minutes on the first side, undisturbed. Flip and fry on the other side for another minute or so, or until golden brown. Remove to a cooling rack set over a baking sheet and allow excess oil to drain. Repeat until all pieces are fried.
  • To serve, slice open each pita and create a pocket. Schmear a big plop of hummus inside each one, followed by some arugula. Top with a pile of the Greek salad, a few chunks of the warm, fried feta, a dollop of yogurt and a few pieces of mint. Serve with lemon wedges and hot sauce, if desired.
  • In the bowl of a stand mixer fitted with a dough hook, mix together the water, sugar and yeast just to dissolve. Add the oil and salt and then gradually add the flour. Increase the speed to medium-high and mix for 7 to 10 minutes, adding just enough additional flour so that the dough no longer sticks to the bowl. Do not add too much flour. The dough should be smooth and slightly sticky. Lightly coat a clean large bowl with oil or cooking spray, then place the dough in the bowl and turn it once or twice to coat it in oil. Cover the bowl with plastic wrap and let it rise at room temperature for 2 hours, or until it has doubled in size.
  • Turn the dough onto a clean work surface and divide it into 8 equal pieces. Mold each piece into a ball by stretching the top and tucking the edges under. Place the balls 1 inch apart on a piece of parchment paper, cover them with plastic wrap and let them rise for 30 minutes.
  • Set an oven rack in the middle position. Preheat the oven to 500 degrees F. Line 2 baking sheets with parchment.
  • With a rolling pin, roll out the balls of dough into 6-inch circles. Place them on the baking sheets and bake for about 5 minutes, or until they're puffy and just starting to brown.

HEIDI'S FRIED CHEESE SANDWICH

My first culinary 'experience'. I must have been about 7, reading Heidi. This recipe was in the edition I was reading and I had to run to the kitchen and try it out immediately. Mom watched. Still fantastic! Expect something like a savoury-cheesey French Toast.

Steps:

  • Butter the bread generously and layer the cheese between the two pieces.
  • Beat the egg with the milk in a container large enough to contain the sandwich and season lightly (don't forget the cheese has salt too).
  • Allow the sandwich to absorb the egg/milk mixture- turn over 1/2 way through so the other side absorbs some too.
  • This should take about 10-15 minutes so as much of the custard is absorbed as possible.
  • Drop a tablespoonful of butter into a skillet (cast iron is best), on medium heat.
  • When it bubbles and smells very fragrant, add the sandwich and fry on both sides till a lovely dark-golden-brown and the cheese is all gooey and melted.
  • Put it on your best plate, pour yourself a big glass of milk, get out a fork and knife and enjoy.
  • Note: The texture of this is not like a regular grilled sandwich as the bread becomes moist and puffy because of the egg/milk soaking.

2 slices bread, thick (preferably bakery, but sandwich bread will do if nothing else is available)
butter
enough swiss cheese, to make a thick filling (the real stuff, I suppose cheddar would be good too, but Heidi's grandfather always gave her gruyer)
1 egg
3 tablespoons milk or 3 tablespoons cream
salt and pepper

SAGANAKI (FRIED CHEESE) GREEK STYLE

This is wonderful to serve as an appetizer, serve lots of lemon wedges and I like crisp Pita Bread Pieces. If you cannot get the Greek cheese you may in a pinch use Italian Provolone - I had to use this because I didn't plan far enough ahead to get the good Greek Cheese. Evelyn/Athens posted a link to this recipe (off Zaar) and when I searced Recipezaar I could not find one like this. Thanks Evelyn. The recipe is simple and very good.

  • To prepare these delicious fried cheese ball recipe, add all the ingredients into a medium bowl, season well with freshly ground pepper and blend to combine.
  • Cover the bowl with some plastic wrap and place in the fridge for 45 minutes. This will help the mixture for the cheese balls to firm up a bit and make it easier to roll into balls.
  • Form the mixture into little cheese balls (this mixture is enough for 14-15 cheese balls) and dredge in some flour shaking off any excess.
  • Fry the cheese balls in a non-sticking pan with plenty of oil, until nicely colored. Place the fried cheese balls on some kitchen paper to absorb the extra oil. (Tips: Heat the oil until very hot and fry them in batches. If the surface of the pan is overcrowded then the temperature of the oil will decrease and your cheese balls will not be crispy any more!)

  • To prepare this saganaki recipe, slice a large block of cheese (or some smaller if you prefer), approx. 10*7cm and 1,5 cm thick. If you cut the cheese thinner, the saganaki will melt into the pan.
  • Place the cheese under running water and then dredge into the flour, shaking off the excess flour. This will help the saganaki form a nice golden crust and to hold its shape when fried.
  • Into a small heavy-bottomed pan add some oil. As soon as the oil heats, add the cheese and fry for a few minutes on both sides, flipping the saganaki carefully with a spatula, until nicely colored.
