SPINACH ARTICHOKE DIP

Spinach Artichoke Dip image

Steps:

  • Preheat the oven to 375 degrees F. Butter a 9-inch round casserole dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Add the minced garlic and cook for a couple of minutes. Crank up the heat a bit and throw in the spinach. Stir the spinach around and cook for a couple of minutes until it wilts; season with salt and pepper. Transfer the spinach to a mesh strainer set over a bowl to drain. Set aside.
  • Melt 2 tablespoons butter in the same skillet, throw in the quartered artichokes and cook over medium-high heat until the artichokes start to get a little color, about 3 minutes. Transfer the artichokes to the strainer with the spinach.
  • In the same skillet or a different pot, melt the remaining 3 tablespoons butter and whisk in the flour until it makes a paste. Cook over medium-low heat for a minute or 2, then pour in the milk. Stir and cook until slightly thickened, about 3 minutes; splash in more milk if needed. Add the cream cheese, pepper Jack, feta, Parmesan and cayenne and stir until the cheeses are melted and the sauce is smooth. Chop the artichokes and spinach and add them to the sauce. Stir to combine.
  • Pour the mixture into the prepared casserole dish. Top with extra grated pepper Jack and bake until the cheese is melted and bubbly, about 15 minutes. Serve with the Salted Pita Wedges.
  • Preheat the oven to 375 degrees F.
  • Cut the pita breads into 6 wedges each. Lay the wedges on a foil-lined baking sheet and brush both sides generously with the olive oil. Sprinkle both sides with salt, then bake until they're golden brown and crisp, 15 to 18 minutes.

8 tablespoons (1 stick) butter, plus more for buttering the casserole dish
1/4 cup minced garlic
One 10-ounce bag fresh baby spinach

Two 14-ounce cans artichoke hearts, rinsed, drained and quartered
3 tablespoons all-purpose flour
1 1/2 cups whole milk, plus more if needed
One 8-ounce package cream cheese, softened
3/4 cup grated pepper Jack cheese, plus more for topping
1/2 cup crumbled feta
1/2 cup grated Parmesan
1/4 teaspoon cayenne
Salted Pita Wedges, recipe follows, for serving
6 pita breads
1/2 cup olive oil
1 tablespoon kosher salt

A MUCH LOVED DIP WE USED TO GET AT OUR FAVORITE GREEK RESTAURANT IN THE CITY OF ORLANDO, FL. THEY TOOK IT OFF THEIR MENU AND SO WE TRIED TO RECREATE IT AND WE CAME VERY CLOSE. IN FACT I THINK MINE WAS BETTER. I MADE IT FOR MY DAUGHTERS BIRTHDAY.

Steps:

  • 1. In a blender, add all ingredients with some of the artichoke juice until smooth. I just add the juice till it came to the consistency I wanted; not runny but a bit thick.
  • 2. Heat oven to 375F; pour into small baking dish topping it with Parmesan cheese; bake till top is brown. I turned my oven to 400f to make it a little more brown at the top. Serve with Nani bread or warm pita's.

1 big hand full of fresh spinach
1 can(s) artichoke hearts, canned (save juice)
1 Tbsp crushed garlic
2 Tbsp crumbled feta cheese
1/4 c fresh parmigiana cheese, grated
2 Tbsp olive oil

This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
  • Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, grated
One 10-ounce box frozen leaf spinach, thawed, drained, squeezed dry and coarsely chopped (see Cook's Note)

1/2 cup shredded whole-milk mozzarella
3/4 cup freshly grated Parmesan

  • In a greased 4-qt. slow cooker, combine the first 9 ingredients. Cook, covered, on low 2-3 hours or until heated through. Serve with crackers and/or cucumber slices.

  • Make sure frozen spinach is completely thawed before squeezing out liquid. Cut a small hole in the bag and squeezed the spinach in the bag and let the water drain out. Open up bag completely place spinach between cheese cloth, tea towel or mesh strainer bag. Make sure all of the liquid is out.
  • In large bowl add yogurt, chopped artichoke hearts, squeezed out spinach, garlic, crumbled feta, mozzarella and shredded parmesan. Fold in all of the ingredients with large spatula to combine, mixing together well.
  • Transfer mixture to prepared baking dish. Topping with more sprinkles of mozzarella and parmesan.
