I had to come up with an apple salsa recipe in class. I pulled this one out of thin air, and it came out extraordinarily good! In fact, when it comes to apple salsa recipes, this is by far the world's greatest.

Steps:
- Squeeze as much juice and pulp as possible out of the lemon and lime into a bowl.
- If you are feeling ambitious, use some of the zest as well.
- Add the honey and mix until uniform, set aside.
- Peel, core and dice the apples to 5mm (0.2 inches) While doing so, add the finished dices to the juice/honey mix so the apple bits don't turn brown.
- Peel and dice the onion to the same size as the apples, add this to the mix.
- Remove the stem and deseed the poblano. Dice to the same size as the others. Add to the mix.
- Finely chop the cilantro.
- Mix everything until uniform. If all goes well, it should have an eerie green color suitable for St. Patrick's day.
- Serve with chips or over lightly seasoned fish or pork.

Steps:
- Place the tomatillos, tomatoes, oil, chili pepper, shallots, cilantro, vinegar, garlic powder, and salt in a large saucepan over medium-high heat. Bring to a boil, then reduce heat to medium-low and simmer for 15 to 20 minutes until the tomatillos have softened. Pour into a blender, and puree until smooth. Chill and serve.

THE ULTIMATE SALSA FRESCA
Salsa fresca is a generic term for any salsa that isn't cooked. There's no right or wrong way to do it - everyone does their own thing. This recipe is my take on what my mom used to make, but I think it's exceptional. (Pat on back, LOL!) Measurements are loose, but the key is the olive oil and mexican oregano. Prep time includes 15 minutes of standing time.

- In a non-reactive bowl, combine first six ingredients.
- Add salt and pepper to taste.
- Add the minced serrano chiles, a little at a time, tasting for "heat" until you reach the level you can stand.
- Let stand for fifteen minutes to let the flavors meld. A small squeeze of lime juice is also good.
- Refrigerate until ready to use. Will NOT keep overnight.
- NOTE: this is such a versatile salsa. Try it in scrambled eggs, then rolled in a flour tortilla (breakfast burrito). Yum!

- Place minced onion in a bowl and cover with cold water. Add vinegar and let sit for 5 minutes or longer. Drain and rinse with cold water.
