GREEN BEAN BUNDLES
I found this recipe in a rural newspaper years ago and have made it often. The bean bundles are excellent with chicken or beef. Sometimes I'll arrange them around a mound of wild rice to make an appetizing side dish. -Virginia Stadler, Nokesville, Virginia

Steps:
- Cook the beans until crisp-tender. Wrap about 10 beans in each bacon strip; secure with a toothpick. Place on a foil-covered baking sheet. Bake at 400° until bacon is done, 10-15 minutes. , In a skillet, saute onion in butter until tender. Add vinegar, sugar and salt; heat through. Remove bundles to a serving bowl or platter; pour sauce over and serve immediately.

GREEN BEAN BUNDLES
Steamed and then baked, these scrumptious green beans take on great flavor, because they are wrapped in bacon and bathed in a savory sauce. This recipe is best when you marinate the bundles overnight.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a large, deep skillet. Cook over medium high heat until partially cooked. Drain, cut each piece in half, and set aside.
- Bring a large pot of water to a boil. Place the green beans on a rack or special steamer basket over the boiling water. Cover with a lid so that the steam does not escape. Steam for a few minutes until the green beans are done. Set the green beans aside. Reserve about 2 cups of the water and dissolve the bouillon cube in it.
- Take a bundle of green beans (4 or 5) and wrap them with a piece of bacon. Secure with a toothpick if necessary. Place the bundles in a shallow baking dish.
- In a saucepan over medium heat, combine the reserved stock with the Worcestershire sauce, soy sauce, butter, brown sugar, and garlic powder. Stir until the sugar is dissolved.
- Pour the sauce over the bundles and bake in a preheated 350 degrees F (175 degrees C) oven for 20 minutes or until the bacon is done.

GREEN BEAN BUNDLES (HAYSTACKS)

Steps:
- 1. Take 5-6 beans and wrap 1/2 slice bacon around, (no need to use toothpick)making a bundle. Put in 9x13 baking pan, keep making bundles until all beans are used up. In sauce pan combine butter, brown sugar and garlic. Simmer on low until butter is melted. Pour butter sauce over bundles, cover and bake 350* for 45 minutes, uncover and bake 15 minutes more. Bacon should be cooked but not crisp. Bake a little longer if necessary.
- 2. You wouldn't think butter, brown sugar and garlic would be good, but Oh my goodness, you can almost drink the sauce it is so tasty. This is another must have for our family gatherings.
GREEN BEAN BUNDLES
I fixed these for my DD and her BF last night and they loved them, as did I. They are pretty easy to put together and the flavors blend well. The presentation plated is very nice. These can also be served as appetizers, cold. Use whole green beans. Can't wait to try these with fresh blanched green beans this summer.

- Preheat oven to 400 degrees.
- Line a cookie sheet with aluminum foil.
- Fold each slice of deli smoked ham in half.
- Place 1/8 to 1/4 tsp brown sugar in center and spread a little with the back of your measuring spoon.
- Place a thin slice of butter on top of the brown sugar.
- Add 5-6 green beans (or enough so that the ham folds over nicely).
- Sprinkle with onion salt.
- Fold ham over green beans.
- Place on cookie sheet, seam side down.
- Repeat with remaining green beans.
- Bake in oven at 400 degrees for 15-20 minutes or until ham is golden brown.
THE BEST GREEN BEAN BUNDLES EVER!
These are the best green bean bundles I have ever tasted. I make them every Thanksgiving and for parties, everone raves about them. It certainly isn't the healthiest, but is the tastiest! I got the recipe from a friend of a friend-so not sure where it orginated. They are time consuming to make, and you have to plan ahead but I promise you they are well worth it!

- Cut bacon into thirds.
- Wrap 8-10 beans in a piece of bacon and secure with toothpick.
- Place in 9 X 13 casserole.
- Cover with marinade of brown sugar, butter, garlic salt, and soy sauce.
