CHOCOLATE CARAMEL TURTLES
Turtles are a favorite in my house. In fact, my mother-in-law always used to have a plateful of these sweet fellas to serve at the holidays. Each bite of Jess' recipe brought back fond memories. Make some for your own holiday celebrations... or wrap 'em up and give as a gift! Delightful.

Steps:
- 1. Prepare countertop with parchment paper (NOT wax paper - it'll stick to your caramel). Arrange toasted pecan halves in a five-point star shape, dropping crumbs or small broken pieces in the middle. Should make about 30.
- 2. Using a double boiler (or a glass bowl set over a saucepan - method: fill saucepan about a 1/4 full of water, set bowl on top. Boil gently to melt ingredients.) Melt the caramels and Cool-Whip. Stir frequently to smooth out clumps.
- 3. When the caramel is smooth, drop tablespoonfuls of it onto the center of the pecans. (I use 2 spoons to accomplish this) Let harden.
- 4. Clean out your bowl, and use the same double boiler process to melt your chocolate. When your chocolate has melted. Spread over caramel on the turtles and let set.
- 5. If you're having trouble with the chocolate setting, use scissors to cut the parchament paper into squares around each turtle. Place on a tray or in a container and refrigerate for about an hour. Once set, remove from refrigerator and remove parchament paper bottoms.
CHOCOLATE CARAMEL TART
It is hard to believe in this day and age - when salted caramel ice cream is almost as ubiquitous as vanilla - that desserts in which salt plays a starring role was once a newfangled concept. This recipe, an adaptation of one attributed to the pastry chef Claudia Fleming, came to The Times in a 2000 article by Amanda Hesser about the development of that very trend, and it is a perfect example of how it's done right. Layers of silky caramel and dark chocolate ganache topped with a sprinkling of crunchy, snow-white fleur de sel make this an unforgettable combination of flavors and textures.

Steps:
- Prepare chocolate dough: In bowl of an electric mixer, combine the butter, confectioners' sugar and cocoa. Beat until smooth. Add egg yolk and vanilla, and beat until blended.
- Sift flour into dough mixture. Beat on low speed until combined. Press the dough into the bottom and up the sides of a 10-inch tart pan. (You can use a 9-inch pan, but the crust will be thicker and the caramel may take longer to set in step 4.)
- Preheat oven to 350 degrees. Line tart with foil, and fill with dried beans, rice or pie weights. Bake for 15 minutes. Remove foil and weights, and bake until pastry is dry and set, another 10 to 15 minutes. Transfer to a wire rack to cool.
- Prepare caramel filling: In a large saucepan, bring sugar, water and corn syrup to a boil. Stir or swirl the pan occasionally, until mixture is a medium amber color, about 12 minutes. Remove from the heat. Caramel will continue to cook and darken off of the heat. Carefully but quickly whisk in the butter, cream, creme fraiche and salt until smooth (mixture will bubble up). Pour hot caramel into tart, and allow to cool and set, at least 1 hour.
- Prepare chocolate glaze: Place chocolate in a bowl. In a small saucepan, bring cream to a boil. Pour hot cream over chocolate and whisk until chocolate has melted and mixture is smooth. Pour glaze over tart, tilting tart for even coverage. Refrigerate until tart is set, at least one hour, then sprinkle with a few granules of fleur de sel. Keep refrigerated until serving.

CHOCOLATE TORTILLA TORTE
Since this is my first recipe to post I wanted to share one of our favorite treats. No one believes it's made with tortillas! Prep time does not include minimum 6 hours or overnight refrigeration! I cut it into 8 pieces. A coworker gave me the recipe years ago, and we've enjoyed it often. Hope you do too.

CHOCOLATE TORTILLA CHIPS-HOMEMADE
This recipe was inspired by Bea L's recipe for Chocolate Caramel Tortilla Dessert- it got me to thinking why not make chocolate tortillas to go with this dessert instead of plain tortillas. For crispy snack they are skillet cooked and then baked . For a soft tortilla they are just skillet cooked. (or cooked over open gas flame...

- 2. Place the ball on a floured surface and knead for about 5 minutes- adding flour until the dough in no longer sticky.
- 3. Cut dough ball into 4 equal parts then cut those pieces in half so that you have 8 pieces.( I doubles the recipe so I have 16 pieces, as shown instead of the 8).
- 4. Form these pieces into balls; let rest 6 minutes. Roll each ball into a circle as this as you can about 1/8 of an inch is good. Heat a heavy skillet over medium heat.DO NOT add any oil or spray to pan it must be a dry surface. (If you can cook them over open gas flame and turn over and over until done do not burn.About 30 seconds on each side.
- 5. If you want soft tortillas they are done. Store in refrigerator when cooled, in a ziploc baggie. For crispy chips like in the photo. Cut each tortilla into 8 equal pieces with a pizza wheel or sharp knife. Place on a cookie sheet in a single layer and bake for 4 to 5 minutes on each side. Remove and cool slightly and sprinkle with powdered sugar, if desired. Enjoy.
