GRILLED ARTICHOKES WITH OLIVE OIL, LEMON, AND MINT

Steps:
- Squeeze juice from halved lemons into large bowl filled with cold water. Cut stem off 1 artichoke, leaving about 1 inch. Snap off outer 2 rows of leaves. Cut off top 1/3 of artichoke. Quarter artichoke lengthwise. Using small knife, cut out choke and prickly small leaves. Place artichoke in lemon water. Repeat with remaining artichokes.
- Bring large pot of salted water to boil. Drain artichokes, add to pot, and boil until crisp-tender, about 15 minutes. Drain. Transfer artichokes to rack and cool. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Prepare barbecue (medium-high heat). Whisk oil, 1/3 cup lemon juice, and mint in small bowl. Season dressing to taste with salt and pepper. Brush artichokes with dressing. Grill until tender and lightly charred in spots, turning occasionally, about 8 minutes. Transfer artichokes to platter. Drizzle with some of remaining dressing. Serve warm or at room temperature.

- Prepare barbecue (medium heat). Using scissors, cut off spiky tips from artichokes. Using spoon, scrape out chokes from centers. Wrap each artichoke in foil. Using tines of fork, poke holes in foil. Grill until leaves pull away easily from heart, turning occasionally, about 40 minutes. Unwrap artichokes. Discard any outer leaves that may be charred and any tough inner leaves. Arrange 6 artichokes on platter. Remove leaves from remaining 2 artichokes and place on platter. Transfer artichoke hearts to processor. Add mint, cream cheese, and oil; blend until smooth. Season to taste with salt and pepper. Transfer dip to bowl and place on platter.

- Up to a day ahead, blitz the artichokes and their oil with the mint in a food processor until fairly smooth. Add crème fraîche, season, then briefly pulse. Add lemon juice. Tip into a small bowl, cover and chill.
- To serve, heat the oven to 200C/fan 180C/gas 6. Tear the pittas into rough pieces and spread over a couple of baking sheets. Drizzle with oil and scatter over some sea salt. Bake for 7-10 mins until crisp.
- Set the bowl of dip on a large platter; add lemon wedge and mint. Surround with pitta pieces.

- Preheat the oven to 175 degrees F.
- Halve all but 2 of the artichoke hearts and grill the rest over medium-high heat on an oiled grill (a grill pan may be substituted) until lightly charred and warmed through. Keep warm in the oven while preparing the spinach and artichoke dip.
- In a large skillet, heat the olive oil over medium-high heat. Saute the onions until tender and translucent, about 3 minutes. Add the spinach and cook until wilted and all the moisture in the pan has evaporated, about 3 minutes. Chop the reserved whole artichoke hearts and add, along with the Greek yogurt, mozzarella and Parmesan. Cook until cheese has melted. - Fill a large bowl with cold water. Squeeze the juice from one lemon wedge into the water. Trim the tops from the artichokes, then cut in half lengthwise, and place halves into the bowl of lemon water to prevent them from turning brown.
- Bring a large pot of water to a boil. Meanwhile, preheat an outdoor grill for medium-high heat.
- Add artichokes to boiling water, and cook for about 15 minutes. Drain. Squeeze the remaining lemon wedges into a medium bowl. Stir in the olive oil and garlic, and season with salt and pepper.
- Brush the artichokes with a coating of the garlic dip, and place them on the preheated grill. Grill the artichokes for 5 to 10 minutes, basting with dip and turning frequently, until the tips are a little charred. Serve immediately with the remaining dip.

- Prepare the artichokes by trimming off the tops and stems. Slice each artichoke in half and use a spoon to remove the fuzzy choke from the center. Immediately rub with lemon wedges to prevent discoloration.
- Fill a large pot with water and bring to a boil over medium-high heat. Add the salt, smashed garlic cloves, and lemon halves to the water, squeezing the lemons first. Add the artichokes and boil for 15-20 minutes until softened and fairly tender.

- To clean the artichokes, fill a medium bowl with water and add the juice of one lemon. Remove the outer layers of the artichokes’ leaves until you reach the tender ones in the middle. Cut off the leaves of the artichoke about halfway down to the heart. Working quickly to prevent oxidation, trim off the bottom of the stem end and, with a peeler or paring knife, peel the outside of the stem until you get to the tender middle.
- Cut the artichokes in half and with a small spoon scoop out the choke. Put the artichoke in the acidulated water while you complete the rest.
- Meanwhile, prepare your artichoke blanching liquid. Fill a medium saucepan with water, along with a small handful of salt, a big glug of olive oil, the bay leaf, white wine, garlic, and 5 sprigs of mint. Let this liquid simmer for about 10 minutes. Taste and adust the seasoning. Add the halved, cleaned artichokes and poach for 10 to 15 minutes, until the artichokes are tender but not breaking down. Spoon the artichokes out onto a sheet tray to cool. The artichokes can be prepared a day ahead and kept cold in the refrigerator.
- Once you’re ready to grill, drizzle the artichokes with olive oil, and place them cut-side down onto an oiled grill or onto a hot cast iron pan. Cook the artichokes until they’re charred and hot and transfer them to a serving platter. Top with a squeeze of fresh lemon juice, a drizzle of olive oil, a handful of the picked mint leaves, black pepper, flaky salt, and shaved pecorino.
