I created these fun cheeseburger quesadilla mashups in honor of my family's two favorite foods. They are so yummy and easy to make! -Jennifer Stowell, Deep River, Iowa

Cheeseburger Quesadillas image

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in ketchup, mustard, bacon and Worcestershire sauce; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 5-7 minutes, stirring occasionally., Meanwhile, in a small bowl, combine mayonnaise, milk, relish and pepper; set aside., Preheat griddle over medium heat. Sprinkle 4 tortillas with cheese; top with beef mixture and remaining tortillas. Place on griddle; cook until golden brown and cheese is melted, 1-2 minutes on each side. Serve with sauce and, if desired, lettuce and tomatoes.

Grilled Cheeseburger Quesadillas Recipe - (4.3/5) image

Steps:

  • Preheat a grill over medium heat. Combine the ground beef, onion, ketchup, mustard, relish, salt and pepper in a medium-size bowl. Place the tortillas on a clean work surface. Spread half of meat mixture on half of each tortilla, leaving about a 1/2-inch border. Top the beef with 2 slices of American cheese and 1/2 cup cheddar. Fold the empty side of each tortilla over the filled side. Grill for 1 to 2 minutes on each side, or until the cheese has melted and light grill marks appear. Cut into wedges before serving. Tip: I like to use 3 (5 ounce) Bobby Chez Smashed Burgers instead of ground beef because they're such a great quality. Cook and crumble, as directed.

Juicy Grilled Cheeseburgers image

Steps:

  • Heat a grill to medium-high direct heat and lightly oil the grates using a paper towel soaked in canola oil or nonstick grilling cooking spray.
  • Spread a 16-inch-long piece of nonstick aluminum foil on a cutting board (or mist a piece of regular aluminum foil with nonstick cooking spray). Top with the onions, 1/4 teaspoon each salt and pepper and 1 tablespoon water. Bring two sides of the foil together, fold over twice to create a seal and then seal the remaining two ends. Put on the grill and cook for 12 minutes, flipping once. The onions should be tender with only a bit of charring. Carefully open the top of the foil to let all the steam out and continue to cook the onions, tossing, until browned and lightly charred, 3 minutes longer. Remove from the heat.
  • While the onions cook, mix the ketchup and mustard together in a small bowl. Season with pepper and set aside.
  • Lightly toast the English muffins on the grill and place one top and bottom on each of 4 plates. Spread some of the ketchup sauce on the bottom half of each muffin and top with a slice of tomato.
  • Divide the beef into 4 patties about 4 inches in diameter and just under 1/2-inch thick. Sprinkle with a total of 1/2 teaspoon salt and 1/4 teaspoon pepper. Place the burgers on the grill. Cook until the edges of the burgers are browning, 3 to 5 minutes, and then flip. Brush the burgers with the remaining ketchup sauce and evenly top with the shredded cheese. Cover the burgers with the grill lid or a large heatproof bowl and continue to cook until the cheese has melted and the burgers are still a bit pink on the inside, about 3 minutes more.
  • Put one burger on top of the assembled muffin bottom and top with some of the grilled onions and the top of the muffin. Serve with pickles if desired.

Burritoville, a local joint down by Southeast University here, specializes in some of the oddest burritos I've ever tasted. From the BBQ chicken to the Buffalo burrito, I've had them all, but they've got only one type of quesadilla. So I've decided to take one of my favorite burritos from there, the cheeseburger burrito and apply it to quesadilla form. Served with a side of fries and a Coke®, it's what I call my most recent of culinary triumphs. Serve with a side of ketchup, yellow mustard, and sweet relish.

Cheeseburger Quesadilla image

Steps:

  • Heat butter in a saucepan over medium heat; cook and stir onion until slightly tender, about 5 minutes. Add ground beef, Worcestershire sauce, salt, black pepper, and garlic powder; cook and stir until beef is browned and crumbly, about 10 minutes. Remove from heat, drain liquid from beef, and let sit for 2 minutes.
  • Heat a griddle or flat pan over medium heat and spray with cooking spray.

Quesadilla Burgers image

Steps:

  • Mix sour cream, ranch dressing, and taco sauce together in a bowl until Southwest sauce is smooth. Cover bowl and refrigerate for flavors to blend.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cook hamburger patties in the preheated grill for 5 minutes, seasoning with Worcestershire sauce. Flip patties. Arrange tortillas on the grill and lower heat to medium-low under tortillas. Add Cheddar cheese and Colby-Jack cheese to tortillas; cook until cheeses melt, 2 to 4 minutes. Continue cooking hamburger patties until cooked through, about 5 minutes more.   • Gently shape beef into 4 balls, shaping just enough to keep together (do not compact). In a large skillet, heat oil over medium heat. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers; cook until well browned and a thermometer reads at least 160°, about 1 minute. Repeat with remaining beef.   • For the Special Sauce: Add ingredients to a bowl then stir to combine. Can be made several days in advance.
  • Add cooked ground beef to a bowl then add ketchup and mustard to taste (I usually go with 2 parts ketchup to 1 part mustard.) You'll want the mixture to be more "saucy" vs dry.
  • Heat a flat griddle or skillet over medium heat then spray with nonstick spray. Place a tortilla onto the skillet then sprinkle on a thin layer of cheddar cheese followed by the ground beef mixture. Add desired toppings then sprinkle on another thin layer of cheese and place a tortilla on top.
  • Once the tortilla on the bottom has browned, flip then continue cooking until the second tortilla has browned. Remove quesadilla to a cutting board then let cool for 5 minutes before slicing with a pizza cutter. Serve with Special Sauce.
