GRILLED BRUSCHETTA

This is my go-to appetizer in the summer when tomatoes and basil are fresh from the garden. The balsamic glaze takes this bruschetta recipe over the top. I like to use a Tuscan herb- or basil-infused olive oil for this. But, it's great with just plain olive oil, too. -Brittany Allyn, Mesa, Arizona

Steps:

  • In a small saucepan, bring vinegar to a boil; cook until liquid is reduced to 3 tablespoons, 8-10 minutes. Remove from heat. Meanwhile, combine tomatoes, shallot, basil, 2 teaspoons olive oil and garlic. Cover and refrigerate until serving., Brush remaining oil over both sides of baguette slices. Grill, uncovered, over medium heat until golden brown on both sides., Top toasts with tomato mixture. Drizzle with balsamic syrup; sprinkle with sea salt and Parmesan. Serve immediately.

Steps:

  • Preheat grill. Brush each slice of bread with the garlic oil. Grill, oil-side-down until lightly golden brown. Turn each slice over and top with 2 tablespoons of Monterey Jack, 1-ounce of goat cheese, black pepper and oregano. Grill until cheese just begins to melt.

8 (1/2-inch) thick slices of country bread
1/4 cup olive oil mixed with 4 cloves crushed garlic
1 cup Monterey Jack cheese, finely grated
8 ounces soft goat cheese
2 tablespoons coarsely ground black pepper
2 tablespoons finely chopped oregano

Steps:

  • Marinate chicken breasts in itallian dressing for 2 to 3 hours. While chicken is marinating, prepare fresh bruschetta in a medium glass bowl by combining extra virgin olive oil with next 5 ingredients. Mix bruschetta well, cover and refrigerate for 1 to 2 hours. Prepare grill. Remove goat cheese from refrigerator and let it sit at room temperature to soften. Grill the marinated chicken breats over medium-high heat, turning 1/2 way through. Remove from grill, spread each breast with about 1 oz of goat cheese and top with heaping scoops of fresh bruschetta. Serve with fresh grilled aspargus and garlic bread.

4 large boneless/skinless chicken breasts
1 c reduced-fat itallian dresing
(bottled/store-bought)
1/4 c extra virgin olive oil
4 large ripe tomatoes seeded and diced
1 large bunch fresh basil chopped
1 to 2 cloves garlic minced
2 tablespoons balsamic vinegar
Sea salt and fresh pepper to taste
1(4oz)pakage of goat cheese

  • Prepare the chicken marinade. Place all of the ingredients for the marinade into a jar. Cover the jar and shake until all of the ingredients are combined.
  • Add the chicken breasts to a gallon-size Ziploc bag or a casserole dish and pour the marinade over the chicken. Be sure the chicken is completely coated in the marinade. Seal the bag and place the chicken in the fridge for at least 30 minutes or as long as overnight (the longer the better).
  • While the chicken is marinating, prepare the bruschetta topping. Place the diced tomatoes in a sieve and sprinkle them with ¼ teaspoon salt. Mix the two ingredients together. Place the sieve over a large bowl and let the tomatoes sit for 10 minutes to drain excess liquid from the tomatoes. Discard the excess liquid and place the tomatoes in a large mixing bowl.
  • Add the red onion, garlic, pepper, olive oil, balsamic vinegar, and basil to the bowl with the tomatoes and toss. Set aside for later.
