CREAMY RIGATONI WITH ROASTED PEPPER AND GRILLED CHICKEN

Creamy Rigatoni with Roasted Pepper and Grilled Chicken image

Steps:

  • Bring a large pot of heavily salted water to a rapid boil. Add the rigatoni and boil for 8 minutes. Drain and set aside.
  • Heat a large cast-iron skillet to medium-high heat. Dry roast the peppers for 7 minutes, until charred. Remove the peppers from the pan and chop into large dice.
  • In the same skillet, cook the bacon until crispy. Add the olive oil and then the onions and diced peppers; cook for 2 minutes. Add the tomatoes and cream and simmer until reduced by half. Add the chicken, Parmesan, 1 1/2 tablespoons salt and 2 teaspoons black pepper; cook until the chicken is heated through. Stir the rigatoni into the sauce. Serve hot.

1 pound rigatoni
Kosher salt and freshly cracked black pepper
1 red bell pepper
1 Anaheim pepper
4 strips bacon, diced
2 teaspoons extra-virgin olive oil
1 yellow onion, small-diced
Two 28-ounce cans crushed tomatoes
1 1/2 cups heavy cream
1 pound chicken tenderloins, cooked and diced
1 cup grated Parmesan

Steps:

  • Cook the pasta according to the package directions. While it cooks, melt butter in a skillet over medium heat and cook the onion and garlic till soft. Whisk in half and half and chicken broth. Stir in seasoned salt and mozzarella. Lower the heat to keep the sauce from boiling.
  • Add the chicken and red pepper slices to the sauce. Stir frequently and keep and eye on the heat so it doesn't boil. Drain the cooked pasta and stir it together with the sauce.
  • Add chopped parsley before serving.

Steps:

  • Heat grill to medium heat.
  • Grill chicken and peppers 10 min. or until peppers are evenly blackened, turning occasionally. Place peppers in closed paper bag or covered bowl. Grill chicken an additional 15 min. or until done (165°F). Meanwhile, cook spaghetti as directed on package.
  • Remove and discard peels, stems, seeds and veins from peppers. Drain spaghetti, reserving 1 cup of the water; pour water into blender. Add peppers, sour cream and bouillon cube; blend until smooth. Pour into Dutch oven or large deep skillet.
  • Add spaghetti and Singles pieces; cook and stir on medium heat 3 min. or until Singles are melted and mixture is heated through. Serve topped with chicken and parsley.

Steps:

  • Cook tortellini and broccoli as directed on tortellini package. Drain; return tortellini and broccoli to saucepan.
  • Meanwhile, puree 1/3 cup roasted peppers in blender. Add Alfredo sauce; blend until mixed.
  • Add Alfredo sauce mixture, chicken and 2 tablespoons roasted peppers to tortellini and broccoli in saucepan; mix well. Cook and stir over medium heat for 2 to 3 minutes or until thoroughly heated, stirring occasionally. Spoon into ungreased shallow 1 to 1 1/2-quart casserole. Steps:

  • While chicken breasts are grilling, prepare sauce.
  • Sauté onion and garlic in butter/margarine until onion is translucent (2 minutes).
  • Add pepper strips and cook, stirring occasionally, until tender crisp (about 5 minutes).
  • Meanwhile, measure into blender the cream cheese, sour cream and wine.
  • Add the peppers and onions to the blender and process until smooth, scraping down sides of container as necessary.
  • Return sauce to saucepan and cook over low heat until heated through (Do Not Boil).

Add shallot and saute 2 minutes or until lightly golden then add garlic and saute 30 seconds longer. Add flour and cook, stirring constantly 1 minute. While whisking slowly pour in milk. Season with salt and pepper to taste and cook until it begins to thicken then reduce heat slightly, stir in cream, bell peppers and parmesan and cook just until parmesan has melted. Pour mixture into a blender, cover and blend until peppers are nearly pureed (some small chunks are fine). Return sauce to pot then add drained pasta to sauce, toss to evenly coat and heat and toss over low heat for a minute to allow some of the sauce to soak into pasta. Toss in 1 Tbsp of basil and parsley. Plate and top with grilled chicken, parmesan and remaining basil and parsley. Serve immediately.
  • *To grill chicken - preheat a grill to 425 degrees. Pound thicker parts of chicken to even thickness (or if they are very thick just slice in half through the thickness to get two portions). Brush chicken lightly with olive oil then season both sides with salt and pepper. Brush grill grates lightly with oil and grill rotating once halfway through cooking until center of chicken registers 165, about 7 - 8 minutes total.
