GRILLED SPICY CHIPOTLE BARBECUE TURKEY DRUMSTICKS

Steps:
- Heat gas or charcoal grill. In 1-quart saucepan, cook onion and water over medium heat 3 to 5 minutes, stirring occasionally, until onion is tender. Stir in barbecue sauce, preserves, chile and salt. Cook 1 to 2 minutes, stirring occasionally, until heated through. Reserve 3 tablespoons sauce.
- Cover and grill drumsticks over medium-low heat 25 to 30 minutes, turning frequently and brushing with sauce during last 5 minutes, until juice of turkey is clear when thickest part is cut to bone (180°F).
- Serve drumsticks with reserved 3 tablespoons sauce.

- Preheat an outdoor grill for high heat, and lightly oil grate.
- In a large pot, mix the lemon-lime flavored carbonated beverage, sugar, hot sauce, red pepper, pepper, and onion. Place the turkey legs in the mixture, and bring to a boil. Cook 30 to 45 minutes, until the turkey has reached an internal temperature of 180 degrees F (80 degrees C).
- Remove onion slices from the mixture, and arrange on the prepared grill. Place turkey legs over the onions. Drizzle with honey, and season with steak seasoning. Cook, tuning once, 20 minutes, or until a crisp browned crust has formed on the turkey legs.

- Preheat a grill for indirect cooking at about 350 degrees F.
- Mix the paprika, chipotle powder, celery salt, coriander, cumin and 1 tablespoon salt together in a small bowl. Rub the mixture all over the turkey breast, getting some under the skin as well.
- Grill the turkey over indirect heat, rotating once halfway through, until an instant-read thermometer inserted in the middle (do not touch bone) registers 165 degrees, about 1 hour 15 minutes to 1 hour 45 minutes. Transfer the turkey to a cutting board and let rest for 10 minutes.
- Carefully slice each half of the turkey breast off the bone, then slice the meat crosswise. Transfer to a serving platter and garnish with the herbs and sliced citrus.

- Heat coals or gas grill for indirect heat. Tuck garlic cloves under skin of turkey.
- Place all remaining ingredients in mini food processor or blender. Cover and process until smooth.
- Place turkey on grill; brush with marinade. Cover and grill turkey over drip pan and 5 to 6 inches from medium heat 1 hour 30 minutes to 2 hours, turning occasionally and brushing with marinade, until meat thermometer reads 170°F and juice is no longer pink when center is cut. Let stand 5 minutes before serving. Discard any remaining marinade.

- Turkey Prep: To prepare marinade, combine lime juice, oil, honey, chipotle peppers, adobo sauce, mango chutney, salt and pepper in blender or small food processor. Process until marinade is completely combined. Place turkey drumsticks in large sealable bag and pour marinade over them. Press out air and seal bag tightly. Move drumsticks around in bag to distribute marinade and store in the refrigerator for at least 4 hours or overnight.
- Time to Grill: When ready to grill, take drumsticks out of marinade letting excess marinade drip off. Discard marinade. Prepare to cook drumsticks on grill over indirect medium heat. Grill over indirect heat for 60 to 90 minutes, turning drumsticks every 20 to 30 minutes. Grill time will depend on size of drumsticks. Prepare glaze by combining barbecue sauce, mango chutney and chipotle hot sauce. Brush onto turkey drumsticks during last 15 minutes of cook time. Cook drumsticks until juices run clear or internal temperature reaches 165°F. Serve warm off the grill.

- Place turkey in a resealable plastic bag set in a shallow dish. For marinade, in a small bowl combine 1/2 cup cola, 1/4 cup bourbon, oil, garlic, salt, and, if desired, cayenne pepper. Pour marinade over turkey. Seal bag; turn to coat turkey. Marinate in the refrigerator overnight, turning bag occasionally.
