PINEAPPLE PORK BURGERS
Five ingredients and 20 minutes are all you need to serve up these mouthwatering pork burgers! A slice of grilled pineapple adds a tropical touch.

Steps:
- Heat gas or charcoal grill. In medium bowl, mix pork, seasoning and 2 tablespoons reserved pineapple juice. Shape mixture into 4 patties, about 1/2 inch thick.
- Place patties on grill over medium heat. Cover grill; cook 6 to 7 minutes, turning once, until no longer pink in center and meat thermometer inserted in center of patties reads 160°F. During last 4 minutes of cooking time, add pineapple slices to grill, turning once.
- On bun bottoms, place lettuce, burger and pineapple slice. Cover with bun tops.

GRILLED PORK WITH SPICY PINEAPPLE SALSA

- In a large saucepan, combine the first 9 ingredients. Bring to a boil; cook 20-25 minutes or until mixture is reduced by half, stirring occasionally., Meanwhile, for pork, mix spices; rub over tenderloins. Grill tenderloins on a lightly oiled rack, covered, over medium heat or broil 4 in. from heat 18-22 minutes or until a thermometer reads 145°, turning occasionally., Let stand 5 minutes before slicing. Serve with salsa and lime wedges.

GRILLED PORK BURGERS

- In a large bowl, combine the first eight ingredients. Crumble pork over mixture and mix well. Shape into six patties. , Grill burgers, covered, over medium heat for 4-5 minutes on each side or until a thermometer reads 160°., Serve on buns; top with lettuce, tomato and onion if desired.

MARINATED PORK CHOP WITH PINEAPPLE SALSA
Steps:
- For the marinade:
- Blend all the ingredients in a large bowl. Place in a resealable plastic bag and add the pork chops. Marinate in the refrigerator for up to 3 hours.
- For the salsa:
- Mix all the salsa ingredients in a medium bowl. Taste for seasoning. Set aside for 10 minutes for flavors to meld.
- Preheat grill to medium heat.
- Remove chops from marinade. Grill for 5 minutes per side for a medium rare and 8 minutes for medium. Remove chops from grill and let rest 10 minutes before slicing. Spoon the salsa on top.
GRILLED PORK TENDERLOIN WITH GRILLED PINEAPPLE-RED ONION SALSA

- FOR THE PORK: Combine salt, sugar, cumin, and chile powder in small bowl. Reserve 1/2 teaspoon spice mixture. Rub remaining spice mixture evenly over surface of both tenderloins. Transfer to large plate or rimmed baking sheet and refrigerate while preparing grill. 2
- FOR A GAS GRILL: Turn all burners to high, cover, and heat grill until hot, about 15 minutes. Leave primary burner on high and turn off other burner(s). 3
- Clean and oil cooking grate. Place tenderloins on hotter side of grill. Cover and cook, turning tenderloins every 2 minutes, until well browned on all sides, about 8 minutes. 4
- FOR THE SALSA: Brush pineapple and onion with 1 teaspoon oil. Move tenderloins to cooler side of grill (6 to 8 inches from heat source) and place pineapple and onion on hotter side of grill. Cover and cook until pineapple and onion are charred on both sides and softened, 8 to 10 minutes, and until pork registers 140 degrees, 12 to 17 minutes, turning tenderloins every 5 minutes. As pineapple and onion and tenderloins reach desired level of doneness, transfer pineapple and onion to plate and transfer tenderloins to carving board. Tent tenderloins with aluminum foil and let rest for 10 minutes
- While tenderloins rest, roughly chop pineapple. Pulse pineapple, onion, cilantro, serrano, lime juice, reserved spice mixture, and remaining 1 tablespoon oil in food processor until mixture is roughly chopped, 4 to 6 pulses. Transfer to bowl and season with salt and extra lime juice to taste.
GRILLED PORK LOIN WITH FIRE-ROASTED PINEAPPLE SALSA

- Mix tomato paste with chili powder. Combine with orange juice, lime juice and oil in a double resealable bag. Add tenderloin and marinate at least 3 hours. Heat a large pan over high heat to the smoking point, 3 to 4 minutes. Brown pineapple 4 to 5 minutes, stirring occasionally. Add pineapple juice and stir 1 minute, scraping up brown bits from pan. Remove pineapple from heat. Combine in a bowl with pepper, onion and basil. Heat a grill or grill pan over high. Coat with cooking spray. Remove pork from marinade; place on grill. (Discard excess marinade.) Reduce heat to medium; cook, turning occasionally, until pork is no longer pink and internal temperature is 160°F 18 to 20 minutes. Let pork rest 5 minutes before slicing. Spoon salsa over pork.

This is my favorite salsa to go with summer grilling! Have served this for guests and family and everyone loves it! Serve with grilled chicken breast, fish, or pork.

- Preheat grill for medium heat and lightly oil the grate. Spray pineapple pieces with cooking spray.
- Cook pineapple on the grill until lightly browned and caramelized, 5 to 10 minutes. Remove pineapple from grill and cool; chop.
- Mix pineapple, red bell pepper, onion, cilantro, jalapeno pepper, garlic, lime juice, sugar, salt, and ground black pepper together in a bowl; refrigerate until chilled and flavors blend, about 1 hour.

- SHAPE: Add all the burger ingredients to a bowl and use your hands to gently work the burger mixture together, making sure all the ingredients are evenly combined but so that the mixture is not overworked. Divide the meat into four evenly sized portions, then form each one into a burger patty. Press your thumb into the middle of each patty to make an indentation that will stop the burgers from puffing up as they cook.
- PAN FRY: Heat a skillet over medium heat and add enough oil to lightly coat the pan. Add the burgers and cook until the burgers form a nice golden crust, about 5 minutes. Flip the burgers and cover the skillet with a lid, cooking for another 3 – 4 minutes, until the pork is cooked through.
- TOP: While the burgers are cooking, combine all the salsa ingredients in a bowl and stir them together. When the burgers are done, top each with some of the salsa. We like to put the burgers on top of some butter lettuce and a handful of shredded cabbage for crunch.
