OVER THE FIRE SCALLOPED POTATOES

I make these great hands on potatoes beforehand, when everything is going to be cooked on the grill. They're also great for a campfire on a small grill. These potatoes will keep everyone coming back for more! Have recipe in hand!

Over the Fire Scalloped Potatoes image

Steps:

  • Preheat a grill for medium heat.
  • Prepare 8 pieces of aluminum foil with vegetable cooking spray. Combine potatoes, green onion, soup, cheese, (and bacon and mushrooms if using) in a bowl. Season to taste with salt and pepper. Evenly divide the potato mixture among the squares of aluminum foil. Dot with butter. Fold into foil packets, sealing well.
  • Cook foil packets on the grill for 12 to 20 minutes, until the potatoes have cooked.

Scalloped Potatoes for the BBQ image

Steps:

  • Preheat grill for medium heat.
  • Layer sliced potatoes on aluminum foil with the onion, garlic, basil, and butter. Season with salt and pepper. Fold foil around the potatoes to make a packet.
  • Place potato packet on heated grill over indirect heat, and cook for 30 minutes, or until potatoes are tender. Turn over packet halfway through cooking.

Steps:

  • Place the potatoes and onion on a large piece of heavy-duty foil (about 20 in. x 20 in.); dot with butter. Combine the cheese, parsley, Worcestershire sauce, salt and pepper; sprinkle over potatoes. , Fold foil up around potatoes and add broth. Seal the edges of foil well. Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender.

Mom's Scalloped Potatoes image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Spread about 1/3 of the potato slices into the bottom of the prepared baking dish. Top with about 1/3 of the onion slices. Sprinkle 3 tablespoons flour over the potato and onion. Arrange 2 tablespoons butter atop the flour. Season the entire layer with salt and pepper. Repeat layering twice more.
  • Heat milk in a saucepan until warm. Pour enough warm milk over the mixture in the baking dish so the top of the liquid is level with the final layer of potatoes.
  • Bake in preheated oven until potatoes are tender, 45 to 60 minutes.

Grilled Garlic Potatoes image

Steps:

  • Preheat grill for high heat.
  • Arrange potato slices, separated by onion and butter slices, on a large piece of aluminum foil. Top with garlic, and season with parsley, salt, and pepper. Tightly seal potatoes in the foil.
  • Place on the preheated grill, and cook 20 minutes, turning once, or until potatoes are tender.
  • Sprinkle potatoes with Cheddar cheese, reseal foil packets, and continue cooking 5 minutes, until cheese is melted.

Steps:

  • In a large bowl, toss potatoes with green onions, bacon, salt and pepper. Place half of the mixture on a greased double thickness of heavy-duty foil (about 18 in. square); dot with 1 tablespoon butter. Fold foil over potato mixture and crimp edges to seal. Repeat to make a second packet., Grill, covered, over medium heat 20-23 minutes on each side or until potatoes are tender. Remove from grill., Open foil carefully to allow steam to escape. Grilled Scalloped Potato Packets image

Steps:

  • Heat your grill to medium high.
  • Tear off 8 sheets of aluminum foil, 12x15 or so.
  • Butter 4 sheets and lay them out on counter.
  • Slice spuds and onion thin.
  • Take 1/3 of each potato slices and lay out on buttered foil the size of your cheese slice.
  • Top with onion's and ham, then with cheese, salt, pepper and cayenne.
  • Repeat ending with a few spuds on top.
  • Fold foil into tight packets and cover packets with one more sheet of foil.
  • Place on grill, cover and cook for 20 minutes, turn and cook another 20 minutes.
  • Unwrap and eat.
  • I have pre-made these to take camping.
