GROWN-UP RICE KRISPY TREATS
The flavor and texture of the classic Rice Krispy Treat, with added fiber and protein! Versatile recipe will allow the addition of whatever nuts, seeds, or candy you want to add- it's like trail mix in a bar! *I have found that if the bars set up too tough or chewy, you may have cooked the marshmallow mixture too long or just pressed them into the pan too firmly. Steps:
- Spray a 15x10x1 baking pan with cooking spray.
- In a medium saucepan over low heat, melt butter, peanut butter, and honey. Add marshmallows and stir frequently until melted and smooth.
- In a large bowl, combine remaining dry ingredients EXCEPT optional chocolate. If adding any kind of chocolate, you must let the mixture cool almost completely before stirring in chocolate.
- Pour marshmallow mixture over dry ingredients, stirring until well combined.
- Press mixture into baking pan completely so that all ingredients stick together, but don't make it too compact.
- Cool completely, cut into bars, and store in an airtight container.

GROWN-UP CRISPY TREATS
Steps:
- For the caramel, place 1 tablespoon butter in a large saucepan and melt over medium heat. Add caramels and evaporated milk, and cook until melted together. Set aside. For the crispy treats, butter the inside of a very large bowl. Pour all of your favorite things into the buttered bowl, then pour caramel mixture all over. Toss and stir with a large spoon or spatula until coating is distributed. Butter sheetpan with remaining butter. Pour mixture into sheetpan and press flat. Let cool, then cut into portions.

Steps:
- Grease a 13x9 pan and set aside.
- Melt butter in large pot over medium heat.
- Add mini marshmallows and marshmallow creme and melt, careful to stir often to avoid burning.
- Take off the heat and add the cereal and stir to coat.
- Press into your prepared pan. You can use waxed paper to push down.
- Cool for 30 minutes or so until cutting.
CARAMELIZED BROWN BUTTER RICE KRISPIES TREATS
This absurdly easy recipe came to The Times from Colin Alevras, then the chef at the Tasting Room in New York, which, until it closed in 2008, offered Rice Krispies treats every day, and made more for Halloween. Browning the butter elevates these plebeian snacks into something more toothsome, and it adds just an extra couple of minutes to the process. They're so good. (The original recipe called for one bag of marshmallows, but after retesting, we've updated it to call for two bags. This should yield a chewier, gooier treat.)

- Line rimmed sheet pan with parchment paper or wax paper, or butter it well.
- In a large pot, melt butter over medium-low heat. It will melt, then foam, then turn clear golden and finally start to turn brown and smell nutty. Watch closely and stir often.
- When butter is evenly browned, stir in marshmallows. (If using unsalted butter, stir in 1/8 teaspoon salt.) Melt and cook, stirring often, until mixture turns pale brown, then stir constantly until lightly browned but not dark, 3 to 5 minutes.
- Turn off heat, add cereal, and mix well, preferably with a silicone spoon or a spatula. Scrape into prepared pan and press down lightly. If necessary, butter hands to press mixture flat. Let cool, and cut into squares or bars.
