GROWN-UP TUNA CASSEROLE
I don't remember where I got this recipe but it is very tasty. This recipe makes two 2-quart casseroles, 10 to 12 servings each.

Steps:
- Preheat oven to 425 degrees.
- Cook the noodles as directed on package and drain; do not overcook.
- Stir tuna, onion, celery, mayonnaise and salt into noodles.
- Mix the soups and milk in a small saucepan. Heat through, stirring constantly.
- Add the cheese to the soups and stir until it melts.
- Pour over the noodle mixture and gently mix.
- Bake uncovered in 2 two-quart buttered casserole dishes for 30 minutes.

GROWN-UP TUNA (NOW CRAB) CASSEROLE
For you empty-nesters, who love old fashioned tuna casserole. It's your turn!!! (Note: Zaar software will not recognize the word "pouches", so I used pkgs. of crab in the ingredients.) Adapted from Country Living magazine.

Steps:
- Pick the crab meat, removing any shell or cartilage. Set aside. Cook and drain noodles. Set aside. Preheat oven to 350°. Lightly coat four 1-cup-capacity baking dishes or one 9" round baking dish with 1 tablespoon butter and set aside.
- Melt remaining butter in a medium skillet over medium heat.
- Add shallots and cook until soft.
- Add tomato paste and garlic and cook, stirring continuously, for 5 minutes.
- Move pan away from the heat and add brandy or chicken broth.
- Return to heat and bring mixture to a boil, whisking continuously.
- Reduce heat to medium low, add 1 cup water, and simmer until thickened slightly - about 10-12 minutes.
- Strain mixture and stir in cream, remaining salt, and pepper.
- Add egg noodles, crab meat, and lemon juice and toss to coat.
- Divide mixture evenly among the prepared baking dishes, cover with foil, and bake until cooked through and the noodles are hot - about 20 minutes.
- Garnish with thyme sprigs and serve immediately.

OLD FASHIONED TUNA CASSEROLE

Steps:
- Cook pasta as directed on package.
- Drain tuna reserving the liquid, add lemon juice and refrigerate.
- Meanwhile, melt the 2 tablespoons butter in large skillet over medium heat and saute the onion and mushroom slices until soft.
- Stir in the flour until blended and cook over low heat until bubbly (stirring constantly).
- Stir in the evaporated milk and add the reserved tuna oil and cook stirring constantly, until mixture thickens.
- Stir in salt and pepper and adjust seasoning as needed.
- Gently stir the tuna with the sauce and heat through.
- Drained pasta and serve warm with the tuna and sauce mixture.
- NOTE: Eileen said that she served it with rice instead of the pasta.

- Cook noodles according to package directions, drain. In a large bowl, combine the noodles, tuna, zucchini, sour cream, celery, onion, mayonnaise, mustard, thyme, oregano and salt; mix well. Spoon half into a 2 quart baking dish coated with nonstick cooking spray.

- Preheat oven to 425 degrees. In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions (it will be undercooked). Drain. In a small bowl, toss together panko, Parmesan, and 2 teaspoons oil.
- In pot, heat 2 tablespoons oil over medium-high. Add onion, season with salt and pepper, and cook until softened, 8 minutes. Add flour and whisk to coat onion with flour. Slowly whisk in broth, then milk.
- Cook, stirring constantly, until sauce comes to a boil. Reduce heat and simmer, stirring frequently, until sauce is thickened, about 8 minutes. Stir in pasta, tuna, and peas and season to taste with salt and pepper.
- Transfer tuna mixture to a 9-by-13-inch baking dish and top with panko mixture. Bake until sauce is bubbling and crust is golden, 17 to 20 minutes. Let cool 10 minutes before serving.

I loved tuna casserole as a kid and found myself craving it as an adult. - In a large skillet, heat 1 tablespoon butter over medium-high heat. Add carrots, onion, red pepper and mushrooms. Cook and stir until tender, 8-10 minutes. Steps:
- Saute first 6 ingredients til meat is done, breaking up beef.
- Drain grease.
- Add spaghetti sauce and sugar, and simmer over very low heat. *You can also use 2 cans tomato soup instead, that's what my mom used, but I prefer spaghetti sauce.
- Cook noodles. (Undercook slightly.).
- While noodles are cooking, in blender or food processor blend the cream cheese, cottage cheese and sour cream.
- Stir in green peppers and green onions.
- Drain noodles.
- Pour noodles into greased 13x9 baking dish.
- Top with meat mixture.
- Top with cheese mixture.
- *You can make 3 simple layers, or you can divide the noodles and mixtures in half and make 6 layers total before topping with cheeses.
- Top with mozzarella and parmesan cheeses.
- Sprinkle very lightly with dried parsley if desired.
- Bake in 350º oven for 30-40 minutes.
- *I use a 1 lb. 10 oz. jar Ragu spaghetti sauce, there apparently is a glitch.
- Serve with a tossed salad and garlic bread.
