Baked Lemon Haddock image

Steps:

  • Preheat oven to 350°. Cut fish into 6 serving-sized pieces. Place in a greased 11x7-in. baking dish. Combine remaining ingredients; sprinkle over fish. Bake until fish just begins to flake easily with a fork, 20-25 minutes.

Pistachio-Crusted Cod with Citrus Salsa image

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Using a small knife, remove the peel, pith and outer membrane of the grapefruit, tangerine and orange. Working over a bowl, slice each into segments; remove the seeds. Drizzle with olive oil and season with salt and pepper. Cover and refrigerate until ready to serve.
  • In a food processor, pulse the pistachios and garlic salt until the mixture resembles small pebbles. Transfer to a shallow dish.
  • Season both sides of the fish fillets with salt and pepper. Use a pastry brush to coat the top side of each piece of fish with the Dijon mustard. Gently press the mustard-coated side of the fillets into the pistachio mixture. Transfer them pistachio crusted-side up onto the prepared baking sheet.
  • Bake until the fish is opaque and flakes easily with a fork, 10 to 12 minutes, depending on the thickness of the fillets. Transfer to a serving plate and top with the citrus salsa. Drizzle with olive oil and season with more salt and pepper before serving.

1 pink grapefruit
1 tangerine
1 blood orange or regular orange
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1/2 cup roasted and salted pistachios without shells, such as Wonderful® Pistachios No Shells

Steps:

  • For salsa, in a bowl, combine the oranges, onion, lime juice, cilantro, pepper flakes, garlic, orange peel, 1/4 teaspoon salt and 1/8 teaspoon pepper. Cover and chill. Combine coriander, cumin and remaining salt and pepper; rub over both sides of fillets. Grill, covered, over medium-hot heat or broil 4-6 in. from the heat for 5-6 minutes on each side or until fish flakes easily with a fork. Serve with citrus salsa.

Haddock and Salsa Verde image

Steps:

  • Place chopped onion, carrot and parsley in a pan with 1 litre of water, the wine, peppercorns, bay leaf and a sprinkling of salt.
  • Bring to a boil, reduce heat and let simmer for 20 minutes.
  • Meanwhile, make the salsa verde.
  • Start by rinsing the capers and patting them dry.
  • Throw the capers in a food processor, along with the chilli, shallot, basil, gherkins, dill and a bit of zest from your lemon or lime.
  • Chop the parsley leaves until you have about 4 tablespoons and add them too, along with a bit of salt and pepper.
  • Blitz until everything is chopped and mixed.
  • Keep the motor running and slowly add the olive oil to make a pesto-type, thick, green sauce.
  • You may need to scrape down the sides of the bowl.
  • Ten minutes before you want to eat, strain the fresh bouillon into a large, deep frying pan.
  • Bring it to a boil, place the fish in the pan and poach until just cooked through (as little as three minutes, depending on the thickness of the fish).
  • Carefully lift the fish onto warmed plates, spoon the sauce over the top and serve.

  • Preheat oven to 350°F. Grease 9-inch glass baking dish. Melt butter in heavy large saucepan over medium-high heat.
