CHARRED ALASKA HALIBUT TACOS WITH CILANTRO PESTO

- Combine all pesto ingredients in a blender or food processor; blend. Drizzle in more olive oil or water, if needed, until you get a salsa-like consistency. Season to taste with salt and pepper; set aside. Heat grill to medium-high heat (400°F). Brush halibut and grill surface with oil; grill 5 to 7 inches from heat about 8 minutes, turning once during cooking. Cook just until fish is opaque throughout. Season with salt and pepper. To assemble tacos: Char tortillas on grill or grill pan. Top each taco with a big pinch of shaved red cabbage. Break halibut into chunks and distribute evenly between tortillas. Top with a generous spoonful of pesto, a sprinkle of extra cotija cheese, and a lime wedge.

- Preheat a grill for high heat. Squeeze the juice from the lime wedges over fish fillets, then season them with salt and pepper.
- Grill fish fillets for about 5 minutes on each side, until browned and fish can be flaked with a fork. Remove to a warm serving plate.

NORTH AFRICAN SPICED ALASKA HALIBUT

- Heat oven to 400 degrees F. Mix all dry ingredients in a small bowl. Stir in harissa, garlic and olive oil.
- Rinse any ice glaze from frozen Alaska Halibut under cold water; pat dry with paper towel. Place halibut portions in spray-coated baking dish. Spoon and spread spice mixture over top of halibut. Cover dish with foil; seal. Roast 18 to 25 minutes for frozen halibut or 10 to 15 minutes for fresh/thawed fish. Cook just until fish is opaque throughout.
- Variation: Remove foil during last 10 minutes of cooking, until lightly browned.

- Preheat grill to medium heat.
- Meanwhile to prepare pesto, place 1 1/2 cups cilantro, 3 tablespoons garlic, pine nuts, Parmesan cheese, 1/4 teaspoons salt and pepper in a food processor and blend.
- Add olive oil, slowly, in a steady stream at low speed until combined and set aside.
- Combine lemon juice, remaining 1/2 cup cilantro, minced garlic and remaining 1/4 teaspoons salt in a small bowl and pour over fish.

ROASTED HALIBUT WITH TOMATOES, SAFFRON, AND CILANTRO

- Preheat oven to 450°F. Place all tomatoes in 13x9x2-inch glass baking dish. Sprinkle with salt and pepper; toss to combine. Sprinkle fish with salt and pepper; place atop tomatoes.
- Whisk oil, vinegar, green onions, chopped cilantro, basil, and saffron in small bowl to blend. Season dressing to taste with salt and pepper. Pour dressing evenly over fish. Let stand 10 minutes.

PAN-ROASTED HALIBUT WITH CILANTRO EDAMAME PESTO

- In the bowl of a food processor, process the garlic, 1/4 cup edamame, cilantro and salt until it becomes a paste. With the food processor running, add 1/4 cup olive oil. Season to taste with lemon juice, salt and pepper. Set the pesto aside.
- Season the halibut on both sides with salt and pepper. Heat 1 tablespoon olive oil in a non-stick oven-safe pan over medium high heat. Sear the halibut on one side for about 3 minutes. Gently turn the fillets and place in the oven to roast for about 4-6 minutes, depending on the thickness of the fish. The halibut should just be flaking but not dry.
- Heat remaining tablespoon of olive oil in a small pan over medium heat. Add remaining edamame to the pan, along with the spinach. Pour the chicken stock in and let it come to a bubble. Season with salt and pepper and stir in the butter and 1-2 tablespoons of the pesto.
BAKED HALIBUT WITH PESTO - THE SCRAMBLE

- Preheat the oven to 400 degrees. Put the butter in a casserole dish large enough to hold the fish in one layer, and place the dish in the oven to melt the butter. Remove the dish from the oven and coat both sides of the fish with butter by flipping it once in the dish. (If the fillet has skin, the skin side should be down after you flip the fish.)
- Brush the pesto on top of the halibut flesh. (At this point, the fish can be covered and refrigerated for up to 12 hours.) Bake it for 15 - 20 minutes, depending on the thickness of the fish, until it is just cooked through and flakes easily. Serve it immediately.
- Place each piece of fish on a separate piece of aluminum foil large enough to fold into a packet. Melt the butter, then brush each fillet with the butter and top it with the pesto. Fold the foil around the fish, making a packet. Place the packets in the slow cooker, stacking as necessary, and cook on low for 7 - 8 hours or on high for 3 1/2 - 4 hours. (Slow cooker cooking times may vary—Get to know your slow cooker and, if necessary, adjust cooking times accordingly.)
- To make delicious fresh pesto, in a blender or food processor, combine 2 cups (tightly packed) fresh basil leaves, 2 chopped garlic cloves, 2 Tbsp. pine nuts, 1/2 cup olive oil, and 1/2 cup grated Parmesan cheese. Process or blend it until it is coarsely mixed.
