Ham Potato Pancakes Recipes
KICKED-UP POTATO PANCAKES
Shredded potato with cheese, ham and more. Tasty and wonderful! I invented this during an Iron chef cooking contest I had with my family - and won!

Steps:
- Combine potatoes, ham, eggs, mozzarella cheese, onion powder, garlic powder, salt, and black pepper in a bowl.
- Heat a large skillet over medium-low heat. Pour enough olive oil to cover bottom of pan.
- Scoop up about 1/2 cup of potato mixture per pancake and form into a patty. Repeat, making 8 patties in all.
- Place 4 pancakes at time in hot olive oil. Cook until browned, about 4 minutes on each side. Transfer to paper towel-lined plate.
- Sprinkle with green onion and Parmesan cheese.

From Favorite Brand Name Recipe Irish Food, Fun & Crafts from March 2006. I enjoyed these very much and I served them with the chutney. Served with St. Patrick's Day dinner - corned beef, cabbage, deviled eggs and pretzels with beer cheese.

Steps:
- 1. Combine grated potatoes, green onions and eggs in large bow; mix well. Add ham, flour, salt & pepper; mix well.
- 2. Heat 2 T. oil in large heavy bottomed skillet. Drop batter by heaping tablespoons and press with back of spoon to flatten. Cook over medium-high heat 2 to 3 minutes per side. Remove to paper towels to drain. Add remaining 1 tablespoon oil, if necessary, to cook remaining batter. Serve pancakes with chutney, if desired.

- If you're using leftover mashed potatoes that had a lot of milk in them, you will likely need to add more flour until the mixture is thick and workable. You should be able to take a ball of dough in your hand and press it into a patty without it sticking to your hands. Add flour until it reaches this consistency. Alternately, if the dough is too thick and dry, add milk one tablespoon at a time until it reaches the right consistency.
