BUTTERMILK OATMEAL MUFFINS
These delicious buttermilk muffins were a significant part of the first dinner I had with my wife when we were courting. She's an excellent cook, and that first meal was truly a gourmet's delight. Steps:
- In a bowl, soak oats in buttermilk for 15 minutes. Stir in egg, sugar and oil. Combine flour, baking powder, baking soda and salt; stir into oat mixture just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° until muffins test done, 16-18 minutes. Cool in pan 5 minutes before removing to a wire rack.

This is a rather unusually-flavored, but very good, cake. I think it would work well for bridal or baby showers--a good change from plain yellow or chocolate cake. The batter in this may seem runny, but that's how it's supposed to be before you put it in the oven!

- Heat oven to 350 degrees F.
- Grease rectangular pan with shortening.
- Beat in large bowl with wooden spoon bananas, sugar, vegetable oil, buttermilk, vanilla, and egg.
- Mix in flour, oats, baking soda, cinnamon, cloves and baking powder.
- Stir in chopped nuts and raisins.
- Spread batter in pan.
- Bake 30 to 35 minutes or until toothpick poked in center comes out clean.
- Cool completely on wire rack.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Combine flour, oats, brown sugar, baking powder, cinnamon, baking soda, salt, and nutmeg in a large bowl. Cut in shortening and mix until just a few chunks remain. Add buttermilk and vanilla extract; stir until combined.
- Shape dough into individual scones, about 3 inches across and 1 inch thick. Arrange on the prepared baking sheet.

SUGAR FREE OATMEAL CAKE
This cake tastes really good with a cup of tea. I like to mix in the raisins and nuts instead of sprinkling them on top. I found that they become to dry and over done on top for my taste. I have guessed at the servings as it depends on how you cut it and a lot of the prep time is just letting it sit there.

- Combine the buttermilk and rolled oats in a bowl and set aside for 15-20 minutes until the oats have softened.
- While the buttermilk and oats are standing, pre-heat your oven to 350°f and line a standard baking tin with greaseproof paper.
- Beat the eggs and add to the oatmeal mix along with the applesauce.
- If using honey add to wet ingredients.
- It using Splenda add to dry ingredients.
- Mix the dry ingredients together, stirring to combine and add to the wet, mixing well.
- Transfer the solid batter into the prepared baking tin. Using a wooden spoon, spread the batter to even it out.
- Sprinkle the cake with roughly chopped walnuts and sultanas and let it sit for 20 minutes before baking.
- Bake cake for approximately 1 hour or until a skewer inserted into the cake comes out clean.

- 1. Combine flour and other dry ingredients in a large mixing bowl. Add oil, buttermilk, eggs and sugars. Beat until smooth. Stir in the nuts, oatmeal, coconut and dates. Pour into a greased and floured 10" tube pan. Bake at 350 degrees for 1 hour.
- 2. Topping: In medium sauce pan combine topping ingredients. Cook until the mixture comes to a rolling boil and becomes bubbly. Remove cake from oven when done and immediately pour mixture over the cake. Do not remove from the pan until cake is cool.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 pan.
- In a small bowl, pour boiling water over oats. Mix well, and cool.
- In a large bowl, combine butter or margarine, 1 cup brown sugar, 1 cup white sugar, eggs, flour, baking soda, spices, and salt. Add cooled oatmeal mixture, and stir to combine. Pour batter into pan.
- Bake for 35 minutes.
- While cake is baking, combine 1/2 cup white sugar, 1/4 cup brown sugar, coconut, melted butter or margarine, vanilla, and cream in a mixing bowl. Remove cake from oven, and turn on broiler. BANANA-OATMEAL CAKE (SCREWED-UP MOTHER'S DAY CAKE)
My mom made this cake for Mother's Day. The cake was in the oven baking. When she realized she didn't add the eggs or salt the recipe called for, she thought it would screw up the cake. But the cake came out so moist and yummy I made her write down the recipe, skipping the eggs and salt. She frosts it with vanilla frosting while the cake is still warm to give it a glazed effect. My family loves this cake.
