HAM AND VEGETABLE PASTA
This recipe started with the question of what to do with leftover ham. It's an adapted recipe from Taste of Home. Although very rich, we loved the mix of fresh vegetables with the ham in a cream-based sauce. I'm going to try the recipe again, lightening the sauce by using half and half with chicken broth to replace the cream.

- Prepare all vegetables and ham for cooking.
- Cook pasta according to package directions.
- Meanwhile, in a large skillet, saute asparagus, mushrooms, carrot, zucchini, and ham in butter until the vegetables are tender.
- Add cream, peas, onions, Parmesan, basil, salt, pepper, and nutmeg; bring to a boil.
- Reduce heat; simmer for 3 minutes, stirring frequently.
- Rinse and drain pasta; add to vegetable mixture and toss to coat.
- Sprinkle with additional Parmesan cheese, if desired.
ONE-POT HAM AND VEGGIE PASTA
This single-pot meal is the perfect way to use up leftover ham for a weeknight dinner. It's creamy, comforting, and quick-and-easy.

- Heat olive oil in a large pot over medium heat. Add ham and onion; saute for about 3 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in Italian seasoning, red pepper flakes, salt and pepper; cook for 2 minutes.
- Whisk together chicken broth, half-and-half, and flour in a bowl until smooth; pour into the pot. Stir in farfalle pasta, cover, and cook for 15 minutes.
- Add peas and carrots. Cook until pasta is cooked through, about 8 more minutes. Stir in Parmesan cheese and garnish with chopped parsley. Serve immediately.

- Cook pasta in large saucepan as directed on package, omitting salt and adding spinach to the boiling water for the last minute.
- Meanwhile, mix Neufchatel, chicken broth, milk and seasoning until blended until blended; set aside. Cook ham and peppers in large nonstick skillet on medium heat 3 to 5 min. or until ham is heated through and peppers are crisp-tender, stirring frequently. Add Neufchatel mixture; cook and stir 2 min.
- Drain pasta mixture. Add to ham mixture along with the tomatoes; cook and stir 1 min.

- Cook pasta according to package directions; drain. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. VEGETABLE NOT-SAGNA PASTA TOSS

- Heat a pot of water to a boil for pasta. Salt boiling water and cook pasta to al dente. Heads up: reserve a ladle of the hot cooking water just before you drain pasta.
- Place the frozen spinach on a plate and microwave to defrost it according to your microwave's directions. Place defrosted spinach in a clean kitchen towel and wring out the liquid.
- Heat a deep skillet over medium-high heat. Add 2 tablespoons extra-virgin olive oil. Halve the zucchini lengthwise then thinly slice into half moons and add to the pan along with the mushrooms. Cook 2 to 3 minutes then add onions and garlic to the pan. Season the vegetables with salt and pepper. When the onions are tender, about 5 minutes, add defrosted spinach, separating into small bits as you handle it, and the roasted red peppers and toss to heat through. Transfer veggies to a dish and return skillet to stove top. Add remaining 1 tablespoon of extra-virgin olive oil and the butter. When the butter melts into extra-virgin olive oil, add 2 rounded tablespoons of flour and cook a minute or so, then whisk in stock and milk. Bring to a bubble and thicken the sauce, reducing it 2 to 3 minutes. Season the sauce with salt, pepper and nutmeg. Slide vegetables back into sauce.
- Place the part-skim ricotta in a large shallow bowl and combine with a ladle of boiling, starchy pasta cooking water. Stir to combine then add in a couple of handfuls of grated cheese.
- Drain pasta and toss with cheeses. Add half the vegetables and sauce to pasta and toss to combine. Tear or shred basil and toss into pasta. Adjust seasonings. Top bowlfuls of Vegetable Not-sagna with remaining veggies in sauce and pass extra grated cheese at the table.

- Bring a large pot of water to a boil. Add a small handful of salt and the pasta. Cook according to package directions (approximately 6-10 minutes) and then drain the pasta. Stir together the cream, thyme, 1/4 teaspoon salt and 1/8 teaspoon pepper. Set the cream mixture aside.
- While the pasta is cooking, heat a large skillet over medium high heat. Add the broccoli and 2 tablespoons of water and cover with lid. Allow the broccoli steam for 1-2 minutes, until bright green and almost tender. Remove the lid and add the peppers and mushrooms. Cook, stirring occasionally, for 3-4 minutes, letting the vegetables brown a bit between tossing each time. Sprinkle with the remaining salt and pepper. When the vegetables are cooked, but still crisp, remove them to a bowl.
- Add the ham to the hot skillet and allow it to brown for a minute or so before stirring. When the ham pieces are hot and lightly browned, add the cream to the skillet. Let it simmer and slightly thicken for 1-2 minutes, until it coats the ham pieces. Add the vegetables, toss to coat and then stir in the pasta. Let the sauce cook for another 2-3 minutes as needed, to thoroughly coat the pasta. (If the pasta is too dry, add a small splash of milk until it reaches the desired consistency.)
- Grate cheese over the top of the pasta and toss to combine and melt the cheese. Serve with additional cheese sprinkled on top, if desired. Enjoy!
