BOURBON-GLAZED HAM
This is a delicious combo of about five recipes I found while researching for my first Thanksgiving ham. The empty baking pan afterwards was my best compliment!

Steps:
- Score the surface of the ham, making diamond shapes about 1/2-inch deep. Place the ham in a large, resealable bag. Add the bourbon, brown sugar, crushed pineapple, honey, and garlic to the bag; refrigerate at least 8 hours, turning the bag over several times while marinating.
- Preheat oven to 350 degrees F (175 degrees C).
- Transfer the ham and marinade to a large baking dish; pour the water into the dish. Attach the pineapple rings around the surface of the ham with toothpicks.
- Bake in preheated oven until the internal temperature reaches 165 degrees F (95 degrees C), basting occasionally with the sauce in the pan, 90 to 105 minutes.

HAM WITH BOURBON PEACH GLAZE
I have not tried this recipe. I got this recipe from Cooking Light. For a pretty presentation, garnish the platter with orange slices, cranberries, fresh bay leaves, and parsley. A serving is 3 ounces.

Steps:
- Preheat oven to 325.
- Combine preserves and bourbon in a small saucepan. Bring to a boil; remove from heat. Stir in cumin, ginger, coriandar, and pepper. Cool slightly.
- Trim fat and rind from ham. Score outside of ham in a diamond pattern; stud with cloves. Place ham on the rack of a broiler pan or roasting pan coated with cooking spray. Pour 1 cup water into pan; place rack in pan. Brush ham with 1/4 cup preserves mixture. Bake at 325 for 2 hours or until a thermometer registers 140, basting ham with remaining preserves mixture every 30 minutes. Transfer ham to a platter; let stand 15 minutes. Discard cloves before serving.

PEACH-GLAZED HAM
This recipe for our family's traditional Easter ham is my own creation. It truly is a winner and even took first place in a local recipe contest.

- Score surface of the ham, making diamond shapes 1/2 in. deep; insert a clove into each diamond. Place on a rack in a well-greased foil-lined roasting pan. Pour soda over ham. Spread 1 cup brown sugar over ham. Add water to pan. Cover and bake at 325° for 1-1/2 to 2 hours., In a large saucepan, combine the preserves, butter, honey, mustard, Liquid Smoke if desired, ground cloves and remaining brown sugar. Cook and stir over low heat until butter is melted and sugar is dissolved. Uncover ham; brush with glaze. , Arrange the pineapple slices and peach halves over ham, securing with wooden toothpicks. Bake, uncovered, for 25-30 minutes or until a thermometer reads 140° and ham is heated through. Discard toothpicks before carving.

BAKED HAM WITH BOURBON GLAZE
This is a classic Southern recipe for Easter or Christmas. The sweetness of the honey and molasses is cut by the bourbon and orange juice, making for a perfect glaze. Once the ham is cool and chilled, be sure to remove the fat from the drippings to save and serve with the leftovers...that is one of the best parts of the recipe!

- Microwave honey and molasses in a 1 quart glass dish at high 1 minute. Whisk to blend. Whisk in bourbon, juice, and mustard.
- Remove the skin and fat from the ham. Place ham in a lightly greased 13x9 inch pan. Make 1/4 inch cuts in ham in a diamond pattern. Pour glaze over ham.
- Bake on the lower oven rack at 350° for 2 to 2 1/2 hours or until a meat thermometer inserted into thickest portion registers 140°, basting every 15 minutes with glaze.
- Remove from pan, reserving drippings. Cover ham, and chill, if desired. Chill reserved drippings.
- Remove and discard fat from the drippings. Bring drippings to a boil in a small saucepan. Serve warm with the ham.
PEACH GLAZE FOR HAM

- Drain peaches, reserving syrup (save peaches for another use). Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep; insert a clove in each diamond. Cover and bake at 325° for 2 hours., Meanwhile, in a small bowl, combine the brown sugar, vinegar, cloves and reserved syrup. , Brush ham with 1/2 cup brown sugar mixture. Bake, uncovered, 25-35 minutes longer or until a thermometer reads 140°. Let stand for 15 minutes before slicing. Serve with remaining brown sugar mixture.

- Preheat your smoker to 250 degrees F. Place the ham cut side down on an elevated roasting rack on top of a rimmed baking sheet.

You can increase the heat on your grill to 400 degrees and roast the glazed ham for 8-10 minutes or until the glaze starts to bubble. For another option, you can turn your oven on to broil and place the ham in the oven for 3-4 minutes to caramelize the glaze. Finally, you can brush on the glaze and caramelize the crust by using a high output blow torch. For all of these options, be careful not to burn the sugar on the outside of the ham and reapply the glaze as needed to form a nice crust.

- Remove skin from the ham by running a knife around the edge where skin meets ham. Then carefully run fingers between the skin and the fat layer to gently remove the skin from the ham. You want to keep as much of the fat on the ham as you can.
- With a knife carefully score the fat layer in a diamond pattern. Try to avoid cutting into the meat of the ham, just score the fat.
- Place ham in a baking dish and bake in over for 10 minutes. This allows the score marks in the fat to open up.
