- In a large skillet, cook beef over medium heat for 8-10 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco seasoning, salsa and corn; heat through. Transfer to an 11x7-in. baking dish; sprinkle with cheese., In a small bowl, mix biscuit mix and milk just until blended; drop by tablespoonfuls over cheese. Sprinkle with pepper., Bake, uncovered, at 350° for 35-45 minutes or until bubbly and topping is golden brown.

HAMBURGER COBBLER
An easy casserole using things already on hand that generated "Wow! This is s-o-o-o good!" responses. My first reaction - keep it a "secret family recipe" Second reaction -Naah. The 'zaar has shared too many great recipes with me, so it's only decent I share back. Easy substitutions of ground chicken or turkey with chicken or turkey boullion. Experienced cooks will throw in bell peppers, olives or things I haven't heard of. Prepare as presented, or have your own fun.

Steps:
- Oven setting 400°F.
- Spray 2 Qt casserole with oil.
- In a large skillet, saute celery and onions in oil until just softening. Add ground meat and stir/crumble until mostly browned. Add mushrooms and stir until soft. Season with salt, pepper, garlic.
- Put corn starch in a measuring cup, and add bouillion. Stir into mixture in skillet and continue stirring until thickened. Pour into 2 quart casserole.
- Combine flour, baking powder and salt in a bowl. Measure 1/2 cup milk and add 3 Tbsp oil. Pour into flour mixture and blend. Place four "dollops" of topping on the meat/veggies in the casserole.
- Bake for 15 minutes.
- Remove from oven and sprinkle grated cheese over all.
- Return to oven and bake another 15 minutes (or until biscuit topping is browed and cheese has formed a melting glaze).

HAMBURGER COBBLER
Raining yesterday so spent the day going through Moms ground beef recipes, found this one added a few ideas of my own, and made it for dinner last night, hubby loved it.

- 1. In heavy skillet brown ground beef, onion, garlic, and salt and pepper. Drain pour into a 9" square casserole dish.
- 2. Top with tomatoes and corn. Mix Worcestershire sauce, ketchup, chili powder, and cumin pour over tomatoes and corn.
- 3. Put cheese on top, Mix up biscuits an place by spoonful's on top of cheese.
- 4. Bake at 400 degrees for 25 minutes.
BURGER OR HOT DOG BUNS
This recipe can be used to make either hamburger buns or hot dog buns. My husband says they are 'top of the line.' Nice and soft.

- In a small saucepan, heat milk, water and butter until very warm, 120 degrees F (50 degrees C).
- In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.
- Divide dough into 12 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 30 to 35 minutes.
- Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes, or until golden brown.
- For Hot Dog Buns: Shape each piece into a 6x4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above. These buns are pretty big. I usually make 16 instead of 12.

- Heat gas or charcoal grill. Place meat in large bowl; pour Worcestershire sauce over beef and gently mix with hands. Divide meat into 4 very loose balls, then gently shape into patties 1/2 to 3/4 inch thick and about 1/2 inch in diameter larger than your hamburger buns. Slightly press center of each patty.
- Sprinkle 1/4 teaspoon salt and 1/4 teaspoon pepper on 1 side of each patty. Place patties, seasoned side down, on grill over medium heat. Sprinkle top of each patty with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cover grill; cook 10 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.
- Serve burgers on buns with lettuce, tomato, onion, mayonnaise and mustard.

- Put oven rack in middle position and preheat oven to 400°F. Lightly oil a 9 1/2-inch (6-cup capacity) pie plate.
- Cook onion in 2 tablespoons oil in a deep 10-inch heavy skillet over moderate heat, stirring occasionally, until edges are golden, 3 to 4 minutes. Add garlic and cook, stirring, 1 minute. Add beef and cook, breaking up large lumps, until no longer pink, 4 to 5 minutes. Add sugar, spices, and 1 teaspoon salt and cook, stirring, 1 minute. Add tomatoes with juice and briskly simmer, stirring occasionally, until liquid is reduced to about 1/4 cup, 8 to 10 minutes.
- While beef simmers, whisk together cornmeal, flour, baking powder, and remaining 1/4 teaspoon salt in a medium bowl. Whisk together milk, egg, and remaining 2 tablespoons oil in a small bowl, then stir into cornmeal mixture until just combined. Fold in 1/2 cup cheese.
- Spoon cooked spiced beef into pie plate with a slotted spoon, reserving juices in skillet. Skim off and discard fat from juices if desired, then pour juices over beef in pie plate.
- Spoon 4 mounds of corn bread batter over beef, then sprinkle remaining 2 tablespoons cheese over batter. Bake until a wooden pick or skewer inserted into center of corn bread comes out clean, 15 to 25 minutes.
- Serve cobbler warm.

- Heat oven to 375°F. In 10-inch skillet, cook beef, onion, bell pepper and seasoned salt over medium heat, stirring occasionally, until beef is brown; drain.
- Stir hot water, 3/4 cup of the milk and the Sauce Mix into beef mixture. Stir in brown sugar and ketchup. Heat to boiling, stirring occasionally. Spoon beef mixture into ungreased rectangular baking dish, 13x9x2 inches; stir in uncooked pasta. Set aside.
- In medium bowl, stir Bisquick mix, remaining 1 cup of the milk and the eggs until blended. Pour evenly over beef mixture.
