CLASSIC HAMBURGER PIE
A classic hamburger pie recipe handed down from my mother.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain. Set aside to cool in a large bowl.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 1 1/2-quart casserole dish.
- Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until the beef is crumbly, evenly browned, and no longer pink, about 10 minutes. Stir green beans and tomato soup into the ground beef mixture; transfer to prepared casserole dish.
- Mash the cooled potatoes with milk, egg, garlic, pepper, and salt; spoon in mounds over the ground beef mixture. Sprinkle Cheddar cheese over the potatoes.
- Bake in preheated oven until cheese is melted and edges of dish begin to brown, 25 to 30 minutes.

- Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
- In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
- In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
- Bake about 25 minutes or until knife inserted in center comes out clean.

- In a bowl, combine the first six ingredients; mix well and set aside. In another bowl, toss baking mix and milk until a soft dough forms. On a floured surface, roll out the dough to fit a 9-in. pie plate. Line ungreased pie plate with pastry. Fill with meat mixture; trim and flute edges. - Brown meat with onion and green pepper.
- Drain.
- Add tomato sauce, beans, and seasonings and let simmer.
- Press dinner rolls into a pie plate forming a pie crust.
- Take 1 cup cheese and mix with egg.
- Pour over bottom of the pie crust.
- Drain excess juice from meat mixture.
- Pour meat mixture into pie plate.
- Spread with remaining cheese.
- Sprinkle with paparika.
- Bake at 350 degrees for 20 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to a boil. Peel and quarter potatoes, and introduce into boiling water; cook until tender, about 15 minutes. Drain and mash. Set aside.
- In a large skillet over medium-high heat, cook ground beef and onion until beef is brown. Drain. Stir in tomato soup and green beans. Pour into a 9x13 baking dish. Mound mashed potatoes in a ring around the meat mixture (do not cover meat). Sprinkle potatoes with shredded cheese.
- Bake in preheated oven 30 minutes, until potatoes are golden.

HAMBURGER PIE CASSEROLE
A simple meat and taters casserole; very old recipe; everything is kind of from scratch. I am sure you could use instant potatoes and canned beans. There are instructions on what to do if you want biscuits on this. In the old days they did that a lot. Just use your own biscuit recipe if you want to add them. This is going to be bland. Mid Westerners like their food that way; add more spices if you like.

- Lightly brown ground beef and onions; drain fat.
- Add salt, pepper, tomato soup, and green beans.
- Pour into a greased 1-1/2 quart casserole.
- Mash hot potatoes; add salt and pepper to taste.
- Add warm milk and egg; mix.
- Drop mashed potatoes in mounds on top of meat mixture; spread if desired.
- Add shredded cheddar cheese on top, or mix into potatoes.
- Bake for 30 minutes at 350 degrees Fahrenheit until hot and bubbly.
- If adding biscuits, cook for 15 minutes at 350 degrees Fahrenheit; add biscuits on top; turn oven up to 425 degrees Fahrenheit; bake 15 or 20 more minutes until biscuits are golden.

This is a simple flavorful complete quick meal and comfort food. It was a old recipe my mother had that was made with can biscuits. I revised it made several changes, made a pot pie out of it, my family and grand kids love it! I use the Pillsbury refrigerated ready-made roll out crust in the box It is a full meal but a salad goes well with it!

- First set out your 2 pie shells and let them come to room temperature.Then dice your potatoes, celery and onions and set aside.
- Brown meat with the onion and celery, just as you meat is half done add potatoes, continue cooking until meat is done. Drain off any fat add mixed vegetables and Lipton onion soup cook on low to med heat until it begins to boil. Mix well your 1/4 cup of water and cornstarch and add to skillet and stir until thickens and remove from heat . Add your salt and pepper to taste.
- Take your pie shell as directed on the box and roll out. I press pie crust into a 11 3/4 X 7 3/4 baking dish but a 9" pie dish will work great also.
- Pour your in your mixture into the pie crust line dish then top with the 2nd pie shell. If using the oblong dish pull the crust out to sides and corners. Make 3 slit's in the top crust and bake at 375°F until golden brown.

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Steps:
- Cook potatoes until tender, mash with milk, butter, salt and pepper.
- While potatoes are cooking, brown ground beef and onions, drain off fat.
- Drain liquid from green beans.
- Stir tomato soup and green beans in to ground beef.
- Season to taste with salt and pepper.
- Turn beef mixture in to a 1 1/2-quart casserole dish.
- Spoon mashed potatoes over the top.
- Bake, uncovered, in a 350°F oven for 30 minutes.
- (Note: you may want to place a sheet of foil under the casserole dish, this tends to "bubble over").

- Warm oil in a skillet over medium-high heat. Cook beef, breaking up large pieces with a wooden spoon, until no longer pink, about 5 minutes. Remove to a bowl using a slotted spoon.
