HEALTHY BLACKBERRY COBBLER

This tasty treat has helped my family stay healthy, lose weight and still be able to enjoy dessert! Other kinds of berries or even fresh peaches are just as delicious in this cobbler. -Leslie Browning of Lebanon, Kentucky

Healthy Blackberry Cobbler image

Steps:

  • Preheat oven to 350°. In a large bowl, combine sugar, tapioca and allspice. Add blackberries and orange juice; toss to coat. Let stand for 15 minutes. Spoon into a greased 2-qt. baking dish., In a large bowl, combine flour, 1/3 cup sugar, baking soda and salt. Combine yogurt, milk and butter; stir into dry ingredients until smooth. Spread over the berry mixture. , Bake for 20 minutes; sprinkle with remaining sugar. Bake until golden brown, 25-30 minutes. Serve warm.

This recipe is not only simple, but is sure to become a family favorite. It may also become an oft-requested dish by friends and neighbors, so be prepared to make a few batches. Goes great with homemade whipped cream (adding a pinch of nutmeg to the whipped cream really adds to the dessert)! = )

Berry Best Blackberry Cobbler image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix together the flour, 1 cup of sugar, baking powder, salt, milk, melted butter, and cream to make a batter. Spread the blackberries out into an ungreased 9x13-inch baking dish, and top with the batter. Sprinkle the top of the batter with the nutmeg and 1 teaspoon of sugar.
  • Bake cobbler in the preheated oven until the top is browned, the fruit is bubbling, and a fork inserted into the center of the batter comes out clean, about 1 hour. Allow to cool before serving.

  • In a large saucepan, combine the cranberries, raspberries, blueberries and honey. Combine the cornstarch, water and lemon juice until smooth; stir into fruit mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour into an ungreased 11x7-in. baking dish., For topping, in a small bowl, combine the flour, sugar, baking powder and salt. Gradually add milk and oil, tossing with a fork until dough forms a ball. Drop by tablespoonfuls onto hot berry mixture. , Bake, uncovered, at 400° for 30-35 minutes or until topping is golden brown. Serve warm with ice cream if desired.
