- In a small bowl, combine the first eight ingredients. In another bowl, whisk the egg white, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in apple. , Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake at 375° for 16-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

- Heat oven to 325°F Lightly oil muffin pan. Peel and core apples; chop them coarsely. Set aside.
- In a mixing bowl, stir together pastry flour, white flour, oat bran, baking soda, cinnamon, and nutmeg.
- Add thawed apple juice concentrate, chopped apples, and enough water to make a light batter.
- Mix just enough to moisten all ingredients. Divide batter among the muffin cups and bake till lightly browned, 25-30 minutes.
- Remove muffins from cups while hot.
HEART HEALTHY OATMEAL MUFFINS
"Hearty" and filling, these low fat breakfast muffins taste great without adding cholesterol or added oil to your diet. Muffins store great in a covered container in the refrigerator - just warm in the microwave. I have been experimenting with cooking low fat and low cholesterol recipes for my husband. Bake in a pre-heated 400 degree oven.

- Pre-heat oven to 400 degrees Fahrenheit.
- Prepare standard sized muffin tins by spraying with a low fat cooking spray or line with muffin cups.
- In one large bowl, combine first five ingredients, mixing all dry ingredients well.
- Stir in raisins.
- In a separate bowl combine the following wet ingredients: egg substitute, applesauce, milk. Stir well.
- Pour wet ingredients into dry ingredients and stir until moistened. Do not over-mix muffin dough.
- Spoon into prepared muffin tins.
- Bake in a pre-heated 400 degree oven for 18-20 minutes or until muffins are lightly browned on top and a toothpick inserted into the center of a muffin is dry when removed.

- In a medium mixing bowl, whisk to combine Wet Ingredients. In another large mixing bowl, stir to combine Dry Ingredients. Add Wet Ingredients to a bowl with Dry Ingredients, gently mix just enough to combine. Do not over mix otherwise muffins won't rise properly.
- Add Add Ins and stir a few times. Distribute batter evenly between 12 openings of a tin (I used regular ice cream scoop) and bake for 17 - 20 minutes or until a toothpick inserted in the centre comes out clean. Let muffins cool for a few minutes and transfer to a cooling rack to cool off completely. Do not leave muffins in a tin as they will over bake and become dry.
