APPLE-OAT BRAN MUFFINS

Apple-Oat Bran Muffins image

Steps:

  • In a small bowl, combine the first eight ingredients. In another bowl, whisk the egg white, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in apple. , Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake at 375° for 16-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

  • Heat oven to 350°F. Mix oats, raisins, brown sugar, cinnamon, salt and 4 cups milk and the apples in 2-quart casserole.

Apple Oat-Bran Muffins image

Steps:

  • Heat oven to 325°F Lightly oil muffin pan. Peel and core apples; chop them coarsely. Set aside.
  • In a mixing bowl, stir together pastry flour, white flour, oat bran, baking soda, cinnamon, and nutmeg.
  • Add thawed apple juice concentrate, chopped apples, and enough water to make a light batter.
  • Mix just enough to moisten all ingredients. Divide batter among the muffin cups and bake till lightly browned, 25-30 minutes.
  • Remove muffins from cups while hot.

1 cup water
1 (12 ounce) can apple juice concentrate, thawed
2 large green cooking apples
1 1/4 cups oat bran
2 cups whole wheat flour
1 cup unbleached white flour
2 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
canola oil or olive oil, for oiling the muffin pan

Muffins store great in a covered container in the refrigerator - just warm in the microwave. I have been experimenting with cooking low fat and low cholesterol recipes for my husband. Bake in a pre-heated 400 degree oven.

Steps:

  • Pre-heat oven to 400 degrees Fahrenheit.
  • Prepare standard sized muffin tins by spraying with a low fat cooking spray or line with muffin cups.
  • In one large bowl, combine first five ingredients, mixing all dry ingredients well.
  • Stir in raisins.
  • In a separate bowl combine the following wet ingredients: egg substitute, applesauce, milk. Stir well.
  • Pour wet ingredients into dry ingredients and stir until moistened. Do not over-mix muffin dough.
  • Spoon into prepared muffin tins.
  • Bake in a pre-heated 400 degree oven for 18-20 minutes or until muffins are lightly browned on top and a toothpick inserted into the center of a muffin is dry when removed.

Distribute batter evenly between 12 openings of a tin (I used regular ice cream scoop) and bake for 17 - 20 minutes or until a toothpick inserted in the centre comes out clean. Let muffins cool for a few minutes and transfer to a cooling rack to cool off completely. Do not leave muffins in a tin as they will over bake and become dry.
