ALPINE CHEESE TOASTS
These irresistible cheesy toasts are made with Gruyère or raclette, cheeses that melt wonderfully. They're perfect for dipping into a cozy stew, like this Potée Savoyard; save any extra mustard sauce for swirling into your bowl of stew at the table.

Steps:
- In a small bowl, whisk together mustard, mayonnaise, and 2 tablespoons water until smooth; season with salt and pepper. (The sauce can be made up to 5 days ahead and refrigerated in an airtight container.)
- Evenly slather lightly toasted bread slices with a layer of mustard sauce. Top evenly with cheese and place on a baking sheet; broil until cheese is melted and bubbly, 1 to 2 minutes, and serve immediately.

A quick and easy TOH recipe that makes uses of leftover cooked meat. I listed ham as the meat ingredient, b/c that is what I have fixed it with, but turkey, chicken, or beef would be good, too.

- In a saucepan, melt butter over medium high heat.
- Stir in flour to form a smooth paste.
- Gradually stir in milk.
- Cook and stir until the mixture is smooth and thickened.
- Add the Worcestershire sauce, mustard, caraway (optional), and pepper.
- Stir until well blended.
- Add the cheese; cook and stir over low heat until melted.
- Cut toast diagonally and place on individual plates.
- Top each with a slice of meat.
- Spoon cheese sauce over the meat and toast.
- Serve immediately.

- Butter the bread on both sides, and lightly brown in a frying pan (use the pan you like most for frying eggs). Smear one side of the toasts with mustard, and transfer to a sheet pan, mustard-side up. Turn on the broiler.
- Mix together the cheese, chile, cilantro and onion, then split the mixture evenly between the toasts. Place under the broiler just until the cheese is melted.
- While the cheese is melting, fry the eggs in the same pan you used to make the toast, until the white edges are crisp, but the yolks are still soft. Gently loosen the eggs from the pan, and slide one on top of each toast. Season with salt and pepper, and serve with ketchup on the side, if you like.
