HIPPY CHICKEN

This recipe is great. Last year a dear friend of mine got married. She was a young bride so all the elder woman of the church gathered together to make her a recipe book. We all donated recipes for her cookbook. This is one of the recipes submitted for the cookbook.

Steps:

  • 1. Preheat oven to 350.
  • 2. Lightly season chicken. Place chicken in a 13x 9 casserole dish.
  • 3. In a bowl, mix jam, dressing, soup mix and garlic. Pour over chicken.
  • 4. Bake for 1 hour. Serve over rice.

1 1/2 lb chicken breast (4 large ones)
1/2 jar(s) apricot/pineapple jam
1 bottle russian dressing
1 box dry onion soup mix (2 packets)
1 Tbsp garlic (minced)
rice (cooked)
salt/pepper to taste or any other spices you wish

Steps:

  • Preheat the oven to 375 degrees F. (Or bring a grill/grill pan sprayed with nonstick spray to medium-high heat.)
  • Sprinkle chicken with curry powder, salt, and black pepper. Evenly cut chicken into 12 strips, and thread each strip onto a skewer. Place the skewers on a baking sheet sprayed with nonstick spray, and bake in the oven until chicken is fully cooked, about 10 minutes. (Or grill until cooked through, 1 to 2 minutes per side. If using a grill pan, remove from heat and re-spray between batches.)
  • Meanwhile, combine all sauce ingredients except yogurt in a small nonstick pot. Bring to medium-low heat on the stove. Stirring constantly, cook until it's hot and well mixed, about 5 minutes.
  • Remove sauce from the heat and let it cool slightly. Add the yogurt and stir until smooth and blended. Serve the sauce with chicken skewers, spoon it on, and EAT!

12 ounces raw boneless skinless lean chicken breast, pounded to 1/2-inch thickness
1/8 teaspoon curry powder
1/8 teaspoon salt
2 dashes black pepper
1/3 cup plain light soymilk
2 tablespoons reduced-fat peanut butter, room temperature
1 1/2 tablespoons reduced-sodium or lite soy sauce
1 teaspoon granulated sugar
1/4 teaspoon crushed garlic
1/4 teaspoon dried minced onion
1/8 teaspoon cayenne pepper
1/4 cup plain fat-free yogurt

Steps:

  • Wash Chicken and cut into strips.
  • Place into bowl with garlic and soy sauce.Mix well and let sit.
  • In a separate bowl, add dressing and mayonnaise and beat together.
  • Add half the milk to the dressing and beat til smooth.
  • Add the other half of the milk and beat til smooth.
  • Add all ingredients together and mix very well, so all of chicken is coated.
  • Let sit one hour.
  • Heat pan with butter.
  • Add 2 lbs of chicken to skillet.
  • Cook on medium-high, while constantly scraping the bottom of skillet so chicken doesn't burn.
  • Do this for 20-25 minutes and do not turn down heat at any point. Liquid will boil off.
  • Serve with Rice and a Salad.
