SWEET HEAT BBQ SAUCE
Have you seen the ingredients list on the back of commercially-produced BBQ sauce? High-fructose corn syrup seems to be in each and every one, and many of the other ingredients would need a chemical engineer to figure out. Solution? Make your own!!! We loved this homemade sauce slathered on chicken parts and ribs that we baked in the oven. Generously brush on the sauce for the last few minutes of baking to get it caramelized and serve more at table-side.

Steps:
- Put all sauce ingredients EXCEPT FOR maple syrup in medium saucepan . Bring to a gentle boil over medium-low heat for 25-30 minutes, or until reduced by half. Whisk occasionally. Stir in maple syrup. Can be prepared ahead. Store in refrigerator.
SWEET AND SMOKY BARBEQUE SAUCE
Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

- Mix vinegar, brown sugar, molasses, honey, Worcestershire sauce, rum, mustard, liquid smoke, ground chile, black pepper, garlic powder, and allspice together in a heavy saucepan over medium heat. Bring to a boil, reduce heat, and simmer until sauce is smooth and brown sugar is dissolved, about 5 minutes.
- Stir ketchup into sauce and bring to a boil. Reduce heat and simmer, stirring occasionally, until sauce is dark and thickened, about 30 minutes.

DADDY'S SECRET BBQ SAUCE
This recipe is a secret. I actually stole it from my mom's recipe box. So...I thought why not post it for everyone to enjoy. It is thin and drippy, but it's one of those vinegar-based sauces and worth a try if you like those sort of toppings. Had it with a roasted pig (yummy in my tummy) and ate till I was sick. This recipe makes a gallon, so if you don't want or need that much, scale this down.

- Brown the onions in the oil. Place all the ingredients in a gallon heavy pot. Simmer one hour.
- If the barbecue sauce is too thick for your taste, add water.
