Gluten-Free Luscious Layer Bars image

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms (dough will be crumbly). Using fingers, press dough in bottom of pan. Bake 15 minutes.
  • Drizzle condensed milk evenly over baked crust. Sprinkle with white chips, chocolate chips, coconut and walnuts.
  • Bake 30 to 35 minutes or until light golden brown. Cool completely, about 2 hours. For bars, cut into 6 rows by 6 rows.

  • Heat oven to 350°F. Line bottom of 13x9-inch pan with foil; spray with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press dough in bottom of pan. Bake 10 minutes.
  • Sprinkle baking chips, coconut, cherries and cashews evenly over partially baked crust. Pour condensed milk evenly over mixture.
  • Bake 25 to 35 minutes longer or until light golden brown, covering edges with strips of foil if necessary to prevent excessive browning. Cool completely, about 1 hour. For bars, cut into 6 rows by 6 rows.

Using a basic cookie recipe, I revised it to be gluten-free and instead of the soft cake-like texture that Starbucks® Cranberry Bliss Bars have, these have a chewy, cookie-like texture. Also, I reduced the sugar so they're not quite so sweet.

Gluten-Free Holiday Bliss Cookie Bars image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch pan.
  • Beat butter, brown sugar, white sugar, eggs, cinnamon, and vanilla extract together in a bowl until smooth.
  • Stir flour, baking soda, salt, and xanthan gum together in a separate bowl. Stir 1/2 of the flour mixture into the egg mixture; mix well. Stir in remaining flour mixture, along with white chocolate chips and coconut. Mix well. Press into the prepared pan.
  • Bake in the preheated oven until the edges start to brown, about 23 minutes. Let cool completely, about 30 minutes.
  • Frost with cream cheese frosting and sprinkle with cranberry bits. Cut into 48 triangles.

  • Preheat oven to 350 degrees F ( 175 degrees C ). Generously grease one 13x9-inch baking pan.
  • Spread 2/3 of the flaked coconut evenly on the bottom of the baking pan. Sprinkle the butterscotch morsels, chocolate chips, and peanuts evenly over the coconut layer. Pour condensed milk evenly over the whole pan. Top with sliced almonds and remaining coconut.
  • Bake in preheated oven for 20 minutes. Cool completely before cutting into squares.
