FRUIT SHERBET
I found this recipe in a newspaper clipping that my mother saved dated June 10, 1933. A light and fruity sherbet made with orange, lemon, and pineapple juices.

- In a large pitcher, mix together the lemon juice and sugar. Stir in the orange juice, milk, and pineapple juice. Pour into a plastic container, and freeze until stiff.

Steps:
- 1. Dissolve gelatin in hot water. Then, add sugar and stir for one minute. Add the rest of the ingredients mixing thoroughly.
- 2. Cover and place in freezer until frozen 1/2 inch thick. (In my freezer, this takes about 5 hours.) Then, beat thoroughly with an electric mixer and return to the freezer, covered, overnight until set.
- 3. I used raspberry Jello and raspberry extract. You can make any flavor you wish, orange, lemon, lime, strawberry... just match the extract to the Jello flavor.
- 4. So smooth and creamy. Scoops beautifully for cones or dishes.

- Preheat oven to 350°. Combine cracker crumbs and 1/4 cup sugar with melted butter. Using the bottom of a glass, press cracker mixture onto bottom and up the sides of a greased 9-in. deep-dish pie plate. Bake until set, 12-15 minutes. Cool completely on a wire rack., Meanwhile, sprinkle gelatin over cold water; let stand 5 minutes. Beat cream cheese and remaining sugar until smooth. Slowly beat in cream and vanilla. Microwave gelatin on high until melted, about 10 seconds; beat into cream cheese mixture. Transfer filling to crust. Refrigerate, covered, until set, about 3 hours., If desired, top with mixed fresh berries.

FRUIT SHERBET

- Combine blackberries and 1/4 cup water in the bowl of a food processor fitted with the metal blade. Process until fruit is very smooth, and pour into a fine mesh sieve set in a deep bowl or a large glass measuring cup. Using a rubber spatula or a wooden spoon, gently press down on the mixture to extract as much liquid as possible. Don't press too hard, or some of the seeds may be forced through the strainer into the liquid. Discard any seeds or pulp that remain in the strainer. Set aside strained puree.
- In a small bowl, stir 2 teaspoons gelatin into remaining 1/4 cup cold water; let stand until gelatin dissolves, about 5 minutes. Meanwhile, in a small saucepan, heat simple syrup over medium heat just until it is warm to the touch, and remove from heat. Add gelatin mixture, and stir until it is dissolved; let cool. Transfer to a large bowl or plastic storage container, and add reserved fruit puree.
- In a mixing bowl, beat 2 egg whites until stiff but not dry peaks form, and fold into fruit puree. Cover container, and place in refrigerator until it is well chilled before using, at least 1 hour.
- Pour mixture into an ice-cream maker, and freeze according to manufacturer's instructions. Transfer sherbet to a large airtight container; place in freezer at least 2 hours or overnight before serving.

- In a small saucepan over medium heat, combine milk, cream, sugar and salt. Stir to dissolve sugar. Remove from heat. Cover and chill thoroughly, 4 hours or overnight.
- Puree raspberries until smooth. Optionally add 1-2 tablespoons of granulated sugar to sweeten the puree. Pour through a fine mesh strainer to remove seeds. Cover and chill until ready to use.
- Churn milk base according to manufacturer's directions. Freeze for 1 hour in a freezer safe container.
- Divide semi-frozen ice cream base into thirds. Fold in puree and juice to create 3 colors and flavors. Optionally, add 1 drop gel food color to the orange and lime portions for a brighter color. Transfer mixtures to large piping bags. Freeze for 30-45 minutes or until soft serve consistency is reached.
