My mother-in-law has made this wonderful granola cereal recipe for years. It's so flexible, and so much cheaper (and better) than the store-bought granola.

Steps:
- Preheat oven to 275 degrees F (135 degrees C).
- In a large bowl, mix oats, wheat germ, and wheat bran.
- In a medium bowl, blend brown sugar, vegetable oil, honey, and water. Mix in vanilla extract, cinnamon, nutmeg, and salt. Stir the brown sugar mixture into the oat mixture until evenly moist, and transfer to a large, shallow baking dish.
- Bake 45 minutes in the preheated oven, stirring every 15 minutes, until lightly brown. Mix dates, pecans, and coconut into the dish, and continue baking about 15 minutes. Allow to cool, and store in airtight containers.

This great cereal mix is another version of the favorite crispy cereal party mix that everyone loves!

- Preheat oven to 250 degrees F (120 degrees C). Melt the margarine in a 9x13 inch baking pan.
- Remove baking pan from oven. Stir in the Worcestershire sauce, garlic powder, seasoning salt and onion powder. Gradually mix in the nuts, pretzels, bagel chips, crispy corn cereal squares, crispy rice cereal squares, and crispy wheat cereal squares. Evenly coat all ingredients.
- Bake approximately 1 hour in the preheated oven. Drain on paper towels.

- In a large bowl, combine the first five ingredients. In a small bowl, combine the remaining ingredients. Drizzle over cereal mixture; toss to coat., Transfer to two greased 15x10x1-in. baking pans. Bake at 250° for 30 minutes, stirring every 10 minutes. Cool completely on wire racks. Store in an airtight container.

RED RIVER HOT CEREAL MIX (COPYCAT)
I bought a box of Red River hot cereal recently-specifically to create a copycat version although it's been on my To Do List for a long time. All ingredients were purchased in bulk at the natural food store using Oregon-based Bob's Red Mill products exclusively including organic 'Pumpernickel Dark Rye Meal' which I was happy to discover. *Please* note that I estimated amounts for this cereal and you can adjust the amounts if you wish. The cooking directions were taken directly from the back of the box.

Steps:
- Combine ingredients in a bowl then transfer to an airtight container or "Ziploc"-type plastic bag.
- To prepare: For 2 servings, place 1 1/2 cups filtered water, 1/2 cup Red River Copycat Hot Cereal Mix and 1/4 teaspoon salt (the salt is optional) in a sauce pan.
- Bring to a boil; stirring occasionally.
- Reduce to a gentle boil and cook 5 minutes uncovered, stirring occasionally.
- After cooking is complete, remove sauce pan from stove top and cover. Set aside for a few minutes.
- Enjoy with your favorite additions and toppings: milk, dried fruit, cinnamon, etc.
HOMEMADE MULTI-GRAIN HOT CEREAL
A multi-grain hot cereal to sustain you through the cold winter months. Find a store that sells grains in bulk so you need only purchase as much grains that are necessary for the recipe.

- NOTE: Measurements above are arbitrary. Feel free to omit any grain or substitute your favorite grain(s).
- In Dutch oven on medium heat, lightly toast the hardy grains (such as brown rice, whole barley, buckwheat groats) for approximately 8-10 minutes or until fragrant.
- Keep stirring grains constantly so they don't burn.
- Add remaining grains and toast another 5 minutes, stirring constantly. Cool mixture slightly.
- Process grain mixture in batches in food processor, grain mill or blender fitted with steel blade. Grind grains to medium coarse consistency (grainy but not powdered.) Transfer ground grains to airtight container and store in refrigerator or freezer.
- To prepare hot cereal*: To 1 cup of rapidly boiling water add 1/3 cup scant of cereal. Continue boiling 30 seconds, breaking up lumps with a fork. Reduce heat, cover pan and simmer cereal for 10-12 minutes.
- *For thinner consistency cereal either increase water or reduce amount of cereal.
- Season with salt to taste.
- Add your favorite toppings such as cinnamon, flax seeds, milk, etc.

- Mix oats, flour, honey, wheat germ, cashews, almonds, vegetable oil, coconut, brown sugar, vanilla, and salt together in a large bowl; spread onto a baking sheet.
- Bake in preheated oven for 15 minutes, stir, and increase heat to 325 degrees F (165 degrees C). Continue cooking until the granola is golden brown, about 10 minutes more. Cool granola completely before storing in an air-tight container.

- Place all the ingredients in a quality blender and pulse until well blended. The mixture should be a very coarse powder, not quite as fine as flour but very small pieces throughout. If you want even more control over the texture of your mix, you can pulse each ingredient separately and then combine. That’s it! Easy, right? Just store in an air tight container and use whenever you like.
- To make hot cereal, cook with a 3:1 ratio of water. I usually cook 1/3 cup hot cereal mix with 1 cup of water for a serving because I like to add lots of nuts, fresh fruit, sometimes nut butter, sweetener and sometimes almond milk. If you don’t plan to add much to your mix, then I’d recommend cooking 1/2 cup mix with 1 1/2 cups water for a serving, but this is really up to you.
- Bring water with a sprinkle of salt to a boil. Whisk in your hot cereal mix. Cover, reduce the heat, and cook for 8-9 minutes. Remove the lid, stir, and continue to cook for another minute.
