HOMEMADE MEATBALLS
My husband has been begging me for a soft homemade meatball for years. This recipe turned out amazing, they are nice and tender, but won't fall apart. One batch makes 50+ meatballs (depending on size). These can be simmered in sauce, frozen for later, etc. I freeze them after cooking to use as needed for quick meals.

- Preheat the oven to 350 degrees F (175 degrees C). Grease rimmed baking sheets lightly.
- Heat bacon fat in a pan over medium heat. Saute onion and garlic in the hot pan until soft, 5 to 7 minutes. Remove from heat and allow to cool.
- While mixture cools, cut the loaf of bread in half horizontally. Scoop out the white bread, leaving a boat-like shell of crust; save crust for pizza bread or garlic toast. Tear white bread into pieces (should yield 5 to 6 cups) and place into a bowl.
- Combine milk, chicken broth, and eggs in a bowl. Pour over the torn bread. Mash bread into small pieces with your fingers. Stir in cooled onion and garlic; mix well. Add parsley, salt, Worcestershire, mustard, Italian seasoning, and pepper. Mix very well.
- Combine ground beef and sausage in a large mixing bowl using your hands. Add bread mixture, about 1 cup at a time, mixing well with your hands between each addition, until all is combined evenly.
- Form meatballs and place on the prepared baking sheets.
- Bake until meatballs are browned and no longer pink in the centers, about 30 minutes.

HOMEMADE MEATBALLS
What comes to mind when you think of meatballs? Some might remember as far back as Lady and the Tramp and the romantic scene shared over a plate of meatballs. Or you might think of Subway's pretty decent meatball sub with marinara sauce. Some might even think of trips to Ikea and the inevitable plate of Swedish Meatballs that somehow go hand in hand with buying furniture.

Steps:
- Combine all the ingredients in a large mixing bowl and mix them together throughly with your hands.
- Scoop out about 1 tablespoon worth of meatball mixture and squeeze it several times to pack it tightly.
- Roll the mixture between the palms of your hands to form a 1 1/2" meatball.
- Arrange each meatball on a baking sheet.
- Bake the meatballs at 425 degrees F for 10-12 minutes.
- Once cooked, remove from oven and place on cooling rack.
- Allow the meatballs to cool down before trying to pick them up or they will break apart.
- Enjoy!

- Combine beef and egg in a large bowl. Add bread crumbs, Parmesan cheese, garlic powder, and Italian seasoning. Mix together, but do not overmix, as it will get tough.
- Shape into 1- to 2-inch balls.
- Heat oil in a skillet over medium heat. Cook meatballs in the hot skillet until browned and no longer pink in the centers, 3 to 5 minutes per side.
- Meanwhile, heat marinara sauce in a pot over medium-low heat. Add cooked meatballs to sauce and let simmer for added flavor, about 15 minutes.

THE BEST MEATBALLS
I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

- Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
- Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
- Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

- Heat your broiler. Put the ground beef in a large bowl.
- Broil the fresh tomatoes just until the skins can be removed easily (the skins will split and char in spots), 7 to 10 minutes. Peel the tomatoes, remove the seeds and purée the flesh in a blender. There should be about 1 1/2 cups.
- Add the mint, cilantro, scallion, garlic, oregano, 2 teaspoons salt and 1 teaspoon pepper to the meat; mix well. Add the tomato purée and knead the mixture until incorporated.
- Bring 6 cups of water to a boil in a large pot or Dutch oven. Add the oil or melted lard to the meat mixture, incorporating it by kneading. The mass should be neither dry nor too liquid. Test the mixture by forming a piece into a ball the size of a walnut. It should hold together.
- Proceed to form walnut-size balls, and then drop a few at a time into the boiling water. Cook for 5 to 8 minutes, until all the meatballs are cooked through. Serve the meatballs in the liquid in which they were cooked, with lime wedges on the side.
